Italian Casserole

Betty's Beefy Italian Casserole Recipe

Описание:

In this video, Betty makes a splendid Beefy Italian Casserole. If you are wanting to get away from the traditional Christmas and New Years foods, this is a casserole that has the taste of lasagna, but is much less trouble!

Ingredients:

4 oz. uncooked wide egg noodles
1 teaspoon salt
1 pound lean ground beef
2 cups (16 oz.) Italian sauce
8 oz. cream cheese, cubed, and softened to room temperature
1 cup cottage cheese
1/2 cup sour cream
3/4 cup finely shredded Parmesan cheese

Cook 4 oz. noodles in a medium to large pot, which has been filled half-way with water and seasoned with 1 teaspoon salt. Cook for about 8 minutes, or until al dente (chewy, not mushy). Drain, and place noodles in a greased 11-inch by 7-inch baking dish. Set aside. Meanwhile, brown 1 pound ground beef in a large skillet, stirring until it is crumbly and no longer pink. Skim off any excess fat and discard. Stir in 2 cups of Italian sauce, and set aside. In a medium-sized bowl, combine 8 oz. cream cheese, 1 cup cottage cheese, and 1/2 cup sour cream. Spread mixture over noodles in baking dish. Spoon beef mixture over cream cheese mixture. Sprinkle with 3/4 cup shredded Parmesan cheese. Bake in a 350 degree oven for 30 to 35 minutes, or until casserole is bubbly and cheese on top is beginning to brown. Serve immediately. I hope you enjoy this Italian-style casserole, after all the turkey, ham, and traditional holiday dishes you have been having lately! Enjoy!!!

ironbuttermilk пишет: The advantage of shredding or shaving one's own cheese is that you avoid the added cellulose, which is meant to keep it from caking together, but also retards it's melting properly. Pre-shredded cheese has only the advantage of convenience in comparison.

ladynredmichigan пишет: Looks and sounds wonderful. Also, your hair looks especially nice today!!!!

etherealone пишет: i like to shave my own too, personally. it lasts longer too (not that it needs to really last any longer than the "forever" it seems to last...lol) I love buckwheat noodles! but they don't bake well at all. turn to mush. so do brown rice noodles sometimes....cant have it all i guess!

Betty's Kitchen пишет: Yes, this casserole freezes well. I would place the leftovers in aluminum foil in a shape that would fit in a baking dish or pan and close the aluminum foil on top and freeze. When you want to reheat it, let it thaw completely (overnight in the refrigerator is best), then place in your baking pan (still in the foil) and bake at 350 degrees F for about 20 to 25 minutes, or until steaming when you open the foil at the top.

Patsy D пишет: I'm thinking this would be a nice recipe to use ground chicken or turkey in, as well. It's hard to find recipes that have enough flavor to incorporate them, but I think this may be the ticket!

It isn't true that you can use Any noodles, as I can attest that Japanese Buckwheat noodles don't work particularly well. LOL. Shaved Parmesan works even better than shredded, if you can find it.

Betty's Kitchen пишет: Thanks for your lovely comment! Rick and I don't do a lot of discussion about our taping sessions. We just decide what we want to cook (based on what we would like to eat , or on what seems to be lacking in our bettyskitchen recipes), and then we chop and slice and dice, with my main responsbility being trying to remember how much of each ingredient we have measured out! It's not a very professional approach, but we have fun doing it, and we have lots of interesting meals to eat!\r
--Betty :)

ironbuttermilk пишет: Yes, just like shaved coconut. . . only much chessier. It looks very like tiny little sheets. Anyway, it melts quite nicely, better than either grated or shredded Parmesan. . . which rather resists melting.

DeeFrootloop пишет: I tried this recipe last night with the family, and I must say that it's definitely a winner! I did change one ingredient, though. I subsituted ricotta cheese for the cottage cheese since none of us like cottage cheese. I also made this very lowfat by using fat free cream cheese, ff ricotta, ff sour cream, reduced fat parmesan, and 95% lean ground beef.. my family had no clue it was all lowfat, which is a HUGE plus. =)

Betty's Kitchen пишет: @MultiButtholes You should be able to eat cottage cheese, but if you are unsure, just substitute cut-up cream cheese in the place of it in your recipe.

Betty's Kitchen пишет: @pieterjames02 Most of the casseroles in bettyskitchen freeze well. One of my favorites is Parmesan Chicken with Wild Rice. It makes a very large casserole, but you could apportion it into covered plastic containers and have several meals. To reheat, just add a little water and slowly heat over low heat, stirring occasionally. You can do this with other casseroles, as well.
