You'll Need:

1/4 cup warm water
1 cup warm milk
1 egg
1/4 cup butter, softened
3 cups bread flour
2 tablespoons brown sugar
2 tablespoons granulated sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1 (.25 ounce) package active dry yeast
1 cup white chocolate chips

Procedures : Place all ingredients (except white chocolate chips) in the pan of the bread machine in the order recommended by the manufacturer. Select cycle, and start machine. If your machine has a Fruit setting, add the white chocolate chips at the signal, or about 5 minutes before the kneading cycle has finished.

Makes a 1 1/2-pound loaf

You'll Need:

1 cup plus 2 tablespoons water
3 cups bread flour
1 cup shredded Cheddar cheese
1 tablespoon taco seasoning mix
1 tablespoon granulated sugar
3/4 teaspoon salt
1 1/2 teaspoons yeast

Procedures : Measure carefully, placing all ingredients in bread machines pan in the order recommended by the manufacturer.

Select Basic/White cycle. Use Medium or Light crust color. Do not use delay cycles. Remove baked bread from pan and cool on rack.

NOTE: This recipe is not recommended for 1 1/2 pound bread machines with cast-aluminum pans in horizontal-loaf shape

The coffee cake we'll be making is a pretty rich cake: it's not difficult, but it will take some time, so be patient and it will be totally worth it. The first thing to do is preheat the oven to 350°F (180°C), after that dice the butter and let it soften; once soft, place in the bowl of a stand mixer with ½ cup (100 g) of sugar and beat until you have a fluffy, frothy mixture. Now dissolve 1 tbsp (10 g) of instant coffee in a couple of tablespoons of hot water, and let it cool; separate the egg whites from the egg yolks and, after beating the butter and sugar mixture for about 10 minutes, add the egg yolks one at a time, beating constantly, as well as the coffee in a thin stream. The mixture is smooth, creamy and with no lumps, that's because all the ingredients were at room temperature, including the eggs. Now fold in the toasted hazelnut meal, which has a strong taste and aroma: if you want something milder you can replace it with almond flour. So, incorporate the hazelnut meal, then add the sifted cornstarch, all-purpose flour and baking powder. After adding all the flours, beat the egg whites with the remaining sugar until soft peaks form, you don't need stiff peaks otherwise it will go lumpy when stirring. Now fold in only a couple of spoonfuls, and stir vigorously to soften the mixture, then add the remaining egg whites, this time stirring gently from bottom to top, to keep from deflating. After that, pour the resulting mixture into a 9-inch (24 cm) round cake pan, a springform pan is better, buttered and floured: bake for about 45 minutes. While the base of the cake is in the oven, move on to the coffee cream: first of all, soak the gelatin leaves in very cold water to soften up. Then combine the milk and the egg yolks in a small saucepan, break the egg yolks in the cold milk, then turn on the heat and, as soon as it comes to a light boil, add the sugar, the instant coffee, and let dissolve. Now add the gelatin, that has been softened and squeezed, let it melt, then add the diced butter. When the butter has melted, let it simmer for a couple of minutes, then turn off the heat. Now transfer the coffee cream to a large shallow container (now it's liquid, but it will set while cooling in the fridge) and cover with cling film, making sure it's in direct contact with the cream: this will prevent the formation of a hard thin layer on the surface, that is difficult to remove once cold. Keep the filling in the fridge for at least 2-3 hours; you can even make the coffee cream the day before, so you won't have to wait for hours. Prepare the coffee soaking syrup by pouring less than ½ cup (100 ml) of water into a small saucepan, bring to a boil, then add 1 tbsp of instant coffee, let it dissolve, and add the sugar, 1 or 2 tbsp, according to your taste. Once dissolved, let it cool completely. After several hours in the fridge, the coffee cream may look like this, hard and gelatinous: don't worry, just put the cream in a food processor with blades, and mix, it will be as soft as before. Now whip 2 cups (500 ml) of heavy cream with the powdered sugar, don't forget to sift it to avoid lumps, and add to the coffee cream; whip until creamy, but not too stiff. So gently blend the 2 mixtures together, then cover with cling film and keep in the fridge for at least 1/2 hour. The base is cooked, how do I know? After 45 minutes test for doneness with a toothpick: if it comes out dry and clean, the cake is ready so you can take it out of the oven and let it cool; if, on the contrary, the toothpick comes out wet and sticky, it's better to bake the cake for 5-10 minutes more. Now unlock the pan and let it cool down. When the base of the cake, the soaking syrup and the filling are cold, we can assemble our cake: so, cut the base in half, and soak with half of the soaking syrup. Now, add a spoonful of filling in the middle. Spread it evenly, sandwich with the other half of the cake and soak with the remaining syrup. Now cover the whole cake with the coffee cream using a spatula, including the sides. If you see any lumps, strain it through a sieve. After covering the whole cake, create a border on the bottom edge with chopped hazelnuts and decorate with the remaining coffee cream on top or garnish as you like. As a final touch, add some chocolate coffee beans. Our coffee cake is ready! If you want to store it for a few days, keep it covered in the fridge so it doesn't absorb the smells, then slice and serve!

Well, it could be made diabetic friendly but many of the ingredients would have to be swapped.

Sugar - Stevia baking mix or Splenda (Stevia is better because its natural)
Butter - Rice Bran or Sunflower unhydrogenated margarine
All purpose flour and Starches - Wholemeal flour (you would probably need to ad more baking powder as you will have a heavier and denser mix)
Nuts are good for adding the illusion of sweetness.

This looks good, too. These videos are always good! I'll have to tryit, I particularly like coffee and hazelnuts, our donut shops have coffee that is this flavor.

You'll Need:

6 eggs, separated
1/2 cup honey, plus more for garnish, divided
3/4 cup granulated sugar, divided
1 cup shelled walnuts, toasted and ground
1/4 cup all-purpose flour
1 teaspoon baking powder
2 teaspoons ground cinnamon
1 cup strong fresh coffee
Vanilla yogurt for garnish

Procedures : Preheat oven to 350 degrees F. Grease sides and bottom of a springform pan. Line base with parchment paper.

In a medium bowl, beat egg yolks, 1/2 cup honey and 1/4 cup sugar until pale and creamy. In a separate bowl, combine walnuts, flour, baking powder and cinnamon; stir into creamed mixture.

In a small bowl, whisk egg whites until stiff, stir 1 tablespoon into batter; fold in remaining whites until evenly incorporated. Pour batter into pan; bake 30 minutes or until cake has risen and shrunk slightly from the sides of the tin.

Meanwhile, heat coffee in a small pan with remaining 1/2 cup sugar, stirring until sugar has dissolved. Boil 3 to 4 minutes or until syrupy. Cool cake about 5 minutes; transfer to a large plate. Spike all over with a skewer; drizzle with syrup. Cool completely; serve in wedges garnished with yogurt and drizzled with honey.

Vanilla Wafer Cake -- Lynn's Recipes

Lynn demonstrates how to make a simple, delicious Vanilla Wafer Cake. This is a great dessert or afternoon treat. From thesouthernladycooks.

2 stick butter, (1 cup)
1-3/4 cup granulated sugar
6 eggs
½ cup evaporated milk
11 ounce box of vanilla wafers, crushed
1-1/2 cups coconut
1 teaspoon lemon extract
1 cup chopped nuts, your choice, (I used pecans)

Preheat oven to 350°.

Grease and flour a bundt pan or use a cooking spray that contains flour. Set aside.

Cream butter and sugar; add eggs and continue mixing. Add milk, vanilla wafers and coconut along with the lemon extract. Mix until well blended. Fold in nuts. Pour into prepared bundt pan. Bake in a preheated 350° oven for 1 hour to 1 hour and 10 minutes until center is done. Test with a toothpick that comes out clean or a cake tester. Cool for 15 to 20 minutes and remove from pan.

You'll Need:

1 cup chopped pecans
1 (8 ounce) can coconut
14 ounces vanilla wafers
1 cup margarine
2 cups granulated sugar
6 eggs
1/2 cup milk

Procedures : Preheat the oven to 350 degrees F.

Chop pecans into small pieces. Pour into a bowl. Add the coconut. Crush the vanilla wafers in a blender and add them to the above and mix well. Cream the softened margarine and sugar. Add eggs, one at a time, to the margarine and sugar, beating well. Fold the dry ingredients into the egg mixture and add the milk. Pour the cake batter into a well-greased tube pan. Bake for one hour. Remove from tube pan when cool.

Slice and serve topped with whipped cream or vanilla ice cream

2 cups chopped walnuts

Procedures : Preheat oven to 350 degrees F. Grease and flour a 12-cup Bundt or 10-inch tube pan.

In a large bowl, combine sugar and butter or margarine; beat until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Gradually add 2 cups confectioners' sugar; blend well. Lightly spoon flour into measuring cup; level off. By hand, stir in flour and remaining ingredients until well blended. Spoon batter into greased and floured pan; spread evenly. Bake for 58 to 62 minutes. Cool upright in pan on wire rack for 1 hour; invert onto serving plate. Cool completely.

Glaze
3/4 cup confectioners' sugar
1/4 cup unsweetened cocoa
1 1/2 to 2 tablespoons milk

In a small bowl, blend 3/4 cup confectioners' sugar, 1/4 cup cocoa, and enough milk for desired drizzling consistency. Spoon over top of cake, allowing some to run down sides. Store tightly covered.

Makes 16 servings

1 box fudge frosting mix
2 cups chopped nuts

Procedures : Preheat oven to 350 degrees F. Grease and flour a Bundt pan.

In mixer, cream butter and sugar together. Add eggs and beat well. Add flour and frosting mix, then nuts. Do not over-beat. Pour into pan and bake for one hour. The top of the cake should rise and be shiny. Cool. Dust with confectioners? sugar

After asking Pepperidge Farm on Twitter where I could find the elusive 3 Layer Lemon Cake in Tucson, they sent me a whole case of cake. I love Pepperidge Farm!
You'll Need:

2 1/2 cups flour
1 1/2 cups granulated sugar
1/2 cup margarine, softened
3 eggs
1 teaspoon baking soda
1 cup buttermilk
1/4 cup poppy seed
2 tablespoons grated lemon peel
2 tablespoons lemon juice
Lemon Glaze (recipe follows)

Procedures : Preheat oven to 350 degrees F. Grease and flour a 12-cup Bundt cake pan.

With an electric mixer, beat sugar and margarine until light and fluffy. Beat in eggs, one at a time.

Mix flour and baking soda; beat into sugar mixture alternately with milk until well blended. Stir in poppy seed, lemon peel and lemon juice. Spread in Bundt cake pan. Bake 50-55 minutes.

Immediately poke holes in top of cake with long-tined fork; pour about 2/3 of the lemon glaze over top before taking out of pan. Cool 20 minutes.

Invert on serving plate using a knife to loosen the edges and middle of pan; remove pan. Spread with remaining glaze.

Lemon Glaze
2 cups powdered sugar
2 tablespoons grated lemon peel
1/4 cup margarine, melted
1/4 cup lemon juice

Mix all ingredients together and stir until well blended

First layer

Second layer
8 ounces (227g) cream cheese, softened
2/3 cup confectioners' sugar
2 tablespoons raspberry liqueur, optional
3 ounces white chocolate, melted
1 egg

Third layer
1/2 cup raspberry jam
1/2 cup whipping cream
4 ounces semisweet chocolate

Procedures : Preheat oven to 325 degrees F.

For the first layer, melt chocolate and butter. Beat eggs and sugar on high speed until thick and lemon colored. Fold in chocolate, flour and baking powder. Pour into greased and floured 10-inch springform pan.

For second layer, beat cream cheese, icing sugar. Beat in liqueur, chocolate, and egg until smooth. Randomly spoon white mixture over brown layer, leaving a space between each spoonful. Bake 45 to 55 minutes until a wooden pick inserted in the center comes out almost clean. Cool

For topping, spoon jam over cake. Heat cream and pour over chocolate, stir till melted. Pour glaze over cake and let set

You'll Need:

Place vinegar in a 1 cup measuring cup; fill with milk; set aside .

In a large mixing bowl combine butter, brown sugar and vanilla extract; beat till light and fluffy. Add eggs on low speed. Add flour mixture alternately with milk. Fold in the chocolate chips.

Nut Topping
1/4 pound soft butter
2 tablespoons granulated sugar
2/3 cup nuts

Spoon batter into pan and put on topping. Refrigerate for 30 minutes to 1 hour to set before baking. Bake at 375 degrees F for 50 minutes

Place the candy bars in a large zip-close bag, seal, then use a rolling pin to smash the candy bars into small, bite-size pieces. Add the nuts to the bag, shake to mix, and set aside.

1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup softened unsalted butter, cut into small cubes
1 cup granulated sugar
2 eggs
1 (8 ounce) container sour cream
1/4 cup unsalted butter, melted (for crumble)

Procedures : Preheat oven to 325 degrees F. Grease and lightly flour a 9- to 10-inch Bundt pan.

Sift the flour, baking powder, baking soda and salt into a large bowl. Add the butter and, using an electric mixer or a spoon, mix well to incorporate. Add the sugar, eggs and sour cream; blend well.

In a small skillet, melt the butter for the crumb and set aside.

Spoon half of the batter into the prepared pan. Sprinkle with half of the cinnamon sugar and half of the candy mixture. Top with the remaining batter, then sprinkle with the remaining cinnamon-sugar and candy mixtures. Top with the melted butter.

Bake the cake on the middle shelf of the oven for 45 to 55 minutes or until a wooden pick comes out clean.

Let the cake cool completely in the pan, then use a flat knife or flat spatula to gently loosen it from the pan. Remove and place on a serving plate.

6 eggs
1 cup granulated sugar
1/4 cup water
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
1 cup cake crumbs
1/4 teaspoon cream of tartar
1/4 teaspoon salt

Filling
2 tablespoons gelatine
1 cup crushed pineapple
1/2 cup raspberry jam
1/2 cup cold water
1 cup apricot puree
3/4 cup chopped pecans
3 cups whipping cream

Filling: Sprinkle gelatine over cold water and let stand for 10 minutes. Dissolve by placing in a pan of hot water.

Drain pineapple and puree apricots.

Whip cream, and slowly whip in gelatin. Divide into four parts. Add one fruit to each of three parts. Fill the layers. Frost sides and center of cake with plain whipped cream, and sprinkle the cake with nuts

Stir in mini chocolate chips and pour everything into a Bundt pan before placing in a 325 degree oven. After 20 minutes, drizzle with a heavy cream and melted chocolate chip glaze. The end result is delicious, gorgeous, and exactly what Dad will want this weekend!

Sarah's Tip of the Day: This one goes out to my dad, Marty Carey, an artist by trade but a chocolate lover at heart! It's a cake that's incredibly rich but still wonderfully moist -- and it's one of the best ways to show your dad how much he means to you this Father's Day.

Prep Time: 20 Minutes
Total Time: 1 Hour 40 Minutes, Plus Cooling
Serves 4

Ingredients:
For Cake
Vegetable oil cooking spray
1 1/2 cups (3 sticks) unsalted butter, room temperature, plus more for pans
1 cup unsweetened cocoa powder, plus more for pans
1 cup boiling water
1 cup sour cream
3 cups all-purpose flour (spooned and leveled)
1/4 teaspoon fine salt
1 teaspoon baking powder
1 teaspoon baking soda
2 1/4 cups sugar
4 large eggs
1 tablespoon pure vanilla extract
1 1/4 cups mini chocolate chips

For Glaze
1 cup heavy cream
8 ounces chopped semi sweet chocolate
Pinch of salt

Directions:

Preheat oven to 325 degrees. Spray a 12 cup bundt pan with cooking spray. In a medium bowl, whisk boiling water into cocoa powder until smooth; whisk in sour cream. In a large bowl, whisk together flour, salt, baking powder, and baking soda. Using an electric mixer, beat butter and sugar until light and fluffy. Beat in eggs, one at a time, until incorporated. Then beat in vanilla. Add flour mixture in three additions, alternating with 2 additions of cocoa mixture and beat until combined. Stir in chocolate chips.

Scrape batter into prepared pan and bake until tops springs back when lightly touches, 1 hour to 1 hour 30 minutes. Transfer to a wire rack set over a parchment paper lined baking sheet. Let cool 15 minutes, then turn our onto rack and let cool completely.

Bring cream to a boil in a medium pot. Add chocolate and let stand 5 minutes. Add salt and stir until smooth. Let stand 10 minutes, then pour over cake allowing the glaze to drip down sides and cover cake. Let set 3 hours at room temperature or 1 hour in refrigerator.

You'll Need:

Fine, dry bread crumbs, for coating pan
3 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
8 ounces (2 sticks) unsalted butter, at room temperature
1/2 teaspoon tangerine (or lime) oil, optional
2 cups sugar
4 extra-large or jumbo eggs
1 tiny drop yellow (or green) food coloring, optional
1 cup milk
Finely grated zest of 3 tangerines (or limes)

Glaze
1/2 cup tangerine (or lime) juice
3/4 cup granulated sugar
1/4 teaspoon tangerine (or lime) oil, optional

Procedures : Preheat the oven to 350 degrees F. Thoroughly butter a 10-inch Bundt or tube pan. Sprinkle the pan with the bread crumbs.

Sift together the flour, baking powder and salt and set aside.

In the large bowl of an electric mixer, beat the butter and oil until soft. Gradually add the sugar and beat until light and fluffy. Beat in the eggs, one at a time, scraping down the sides of the bowl after each addition. Tint with the tiniest drop of food coloring, if using.

On the lowest speed, alternately add the sifted dry ingredients in three additions with the milk in two additions, scraping the bowl as necessary, beating just to mix after each addition.

Stir in grated citrus zest by hand. Pour the batter into the prepared pan, pouring half the batter on one side of the tube pan and half on the other. Level the top by briskly rotating the pan back and forth.

Bake the cake until a cake tester inserted in the middle comes out clean, about 1 to 1 1/4 hours. Remove the pan from the oven and let the cake cool slightly in the pan on a wire rack, 10 to 15 minutes.

Now prepare the glaze. Stir the fruit juice, sugar and oil in a bowl just to mix.

Place a cake rack over the tube pan and invert the cake onto it. Place the rack over a large sheet of foil.

Using a pastry brush, brush the glaze all over the warm cake, until completely absorbed. Brush on any glaze that has dripped onto the foil.

Let the cake cool completely. Using a flat-sided baking sheet or a very large spatula, transfer the cake to a round platter or cake plate. Let the cake stand loosely covered with plastic wrap for several hours, so that the glaze has time to penetrate to the interior of the cake. When ready, the cake will be completely dry. Cut into slices to serve.
