Layered Mexican Rice Casserole
1 can diced tomatoes
1 1/2 cups chicken broth
1 med. onion,chopped
1 Tbsp. oil
1 cup long grain rice
1 tsp. garlic salt
1 cup sour cream
1 can(4 0z.) diced green chiles
1 1/2 cups shredded monterey jack cheese
Drain tomatoes,reserving juice.Add reserved juice to the chicken broth to make 2 1/2 cups;set aside.In med. saucepan,saute onion in the oil until tender.Add tomato-broth mixture,tomatoes,rice and garlic salt. Bring to a boil;reduce heat,cover and simmer 25 min. or until liquid is absorbed. In a small bowl,combine sour cream and chiles.In a 1 1/2 qt. casserole,layer 1/2 of prepared rice,1/2 of sour cream and 1/2 of the cheese.Repeat layers.
Bake,uncovered,in a 350F oven for 20 min.Top with a dollop of sour cream and a pinwheel of sliced avocados.
You can always turn up the heat by adding 2 minced jalapenos or chopped chipotles in adobo.

You'll Need:
1 can tomato sauce, divided
1 pound lean ground beef
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1 small sweet onion, finely cut
1/2 package taco seasoning mix
1 1/2 cups canned corn, drained
6 to 8 medium/large potatoes, boiled and
mashed with butter and milk
1 teaspoon paprika
1 cup grated Cheddar cheese
Procedures : Spoon 2 tablespoons tomato sauce over bottom of medium casserole dish.
Brown ground beef; add garlic salt, pepper and onion, then drain if necessary. Add taco seasoning and remainder of tomato sauce to ground beef mixture. Mix, then put into casserole dish as first layer. Add drained corn evenly throughout pan for second layer. Add mashed potatoes for third layer. Sprinkle paprika over potatoes, then sprinkle with grated cheese. Cover pan with aluminum foil. Bake at 350 degrees F for 30 minutes
