You'll Need: 1 large potato, cooked and dry mashed 4 tablespoons vegetable oil 1 clove garlic, crushed 1 medium onion, peeled and sliced 1 tablespoon fresh coriander 1 teaspoon ground turmeric Freshly ground pepper to taste 1 teaspoon sugar 500g minced chicken or pork 1 shallot, finely diced Prepared puff pastry sheets Procedures : While the oven is preheating to 190?C, heat the oil in a frypan and fry the garlic, onion, coriander and turmeric until the onions are soft.
Add the pepper, sugar and minced chicken, fry until the meat has browned then stir in the mashed potato and shallot. Remove from the heat and allow to cool.
Cut each pastry sheet into four squares and place a spoonful of the mixture in the centre of each square.
Fold the pastry into a triangle, pinching the edges together to form a curly edge.
Bake until golden and serve with satay or chilli sauce for dipping

For a dipping sauce:
Heat water in a pan add sugar, chopped garlic, chopped lemon grass, mix it all the sugar melts. Then add chilly paste, chilly flakes, and lemon juice.
First parboiled potato wedges.
Take a bowl add equal quantity of rice flour and corn flour add sesame seeds, salt, red chilly paste, red chilly flakes, and add water make a thick paste.
Add potatoes in the batter and mix them, and deep fry the potatoes until golden colour.

Recipe Tips: In this recipe add less salt because cheese also has some salt.

In a bowl, combine potatoes 2 eggs, 2 tblspn milk, chicken, mozzarella, spring onion, sage, salt and pepper.
Stir well. Chill for 1 hour.
Beat together remaining egg and milk in a small bowl. Set up another two seperate bowls, one with flour, one with breadcrumbs.
Heat oil in a saucepan over medium heat. Roll mixture into meal or bite-sized balls. Dip into flour, then egg mixture then breadcrumbs. Deep fry for 5 minutes or until golden brown. If croquettes are browning too quickly, reduce heat to allow time to cook through. Serve with your favourite sauce

You'll Need: 4 medium size Ruby Lou potatoes 4 medium size Royal Blue potatoes 2 teaspoons salt flakes fresh herbs (dill, flat leaf parsley) Freshly ground black pepper 100g smoked salmon 60ml olive oil Procedures : Terrine tin ? 16cm x 10cm x 7cm. Line the tin with glad wrap. Boil the potatoes in salted water until tender, allow to cool then peel and set aside. Take the smoked salmon slices and line the inside of the terrine tin. Keep 5 slices aside for the middle and the top. Crush the potatoes with your hand and gently press the potato into the terrine tin. Randomly place 3 smoked salmon slices in the middle, and finish with the rest of the potatoes, place the rest of the salmon on the top and then cover with glad wrap. Refrigerate for 1-2 hours, turn upside down, remove tin and glad wrap and sprinkle with chopped herbs and slice into six. To Serve: Garnish with dressed mixed greens and pickled chillies or gherkins

Soup au Pistou 4 potatoes 2 leeks white and light green part only 8 oz. fresh green beans 1 onion 4 T. olive oil 4 carrots 4 stalks celery 4 zucchini 1 t. salt and ½ t. pepper 2 C. chopped canned tomatoes 4 C. chicken or vegetable stock 2 C. canned white beans drained and rinsed Chop onions and leeks into small pieces of equal size Warm olive oil in a large stock pot over medium low heat Sweat the onions and leeks for 10 minutes until onions are translucent and leeks are tender Chop zucchini, carrots and celery into quarter inch pieces, cut the green beans into pea sized pieces Add to the onions along with salt and pepper Cover and sweat down for 15 minutes Add tomatoes and chicken stock; cover and simmer for 30 minutes Add the white beans and simmer for 10 minutes For the Pesto: 1 C. loose packed fresh basil leaves ½ C. olive oil 2 cloves garlic 2 T. pine nuts ¼ C. parmesan cheese Pulse blend the basil, garlic parmesan, pine nuts and ¼ C. olive oil Drizzle more olive oil as needed while pulse blending until you have a soft paste Stir pesto into the soup and serve with extra grated parmesan or put the pesto in a bowl and have everyone add their own.

Here is my mom's way of getting us to eat our veggies. I love and miss you mom. Please subscribe. Here is the recipe
Ingredients: Baked Potatoes peas or corn or your favorite veggie cut up Butter Milk shredded cheese green onions/scallions salt & pepper
Directions:
Bake your potatoes first. I recomment 400 degrees Fahrenheit for about an hour. Cooking time depends on size of potatoes. Check with fork to see if done.
Then cut them in half and carve out the potatoes leaving the shells behind.
Make mashed potatoes with a spoonful of butter and splash of milk. Mix until smooth and creamy. Add salt and pepper for taste.
Line the bottom of the potato skin shells with a little bit of your cut up vegetable of choice.
Cover vegetables in the shell with mashed potatoes.
sprinkle shredded cheese on top. sprinkle diced green onions or chives or parsley on top.
Bake again until cheese is melted and slightly golden brown on top.
