Mandarin Cashew Casserole

Sweet Salmon Bake with Fruity Avocado Cashew Salad

This healthy and delicious lunch or dinner is easy to prepare and full of flavour! It's one of my favourite "clean eating" choices!

Sweet Salmon Bake
Ingredients
* 1/4 cup maple syrup
* 2 tablespoons soy sauce
* 1 clove garlic, minced
* 1 tsp Wasabi paste
* 1 large salmon filet

Directions
1. In a small bowl, mix the maple syrup, soy sauce, garlic, and Wasabi paste.
2. Place salmon in a resealable plastic bag and marinate in the refrigerator 30 minutes to an hour.
3. Preheat oven to 400 degrees F (200 degrees C).
4. Wrap fish and marinade in foil and bake 15- 20 minutes, or until easily flaked with a fork.
5. Serve drizzled with the additional marinade.

Fruity Avocado Cashew Salad
Ingredients
Fresh, crispy butter lettuce or other lettuce of your choice
2 sliced green onions
2 stalks diced celery
1 whole diced avocado
1 drained tin mandarin orange slices
1/2 cup drained pineapple tidbits
1 cup roasted unsalted cashews
2 parts extra virgin olive oil, 1 part balsamic or red wine vinegar
salt and pepper to taste.

Directions
Toss everything up in a large bowl before you put the salmon in the oven. Let salad rest at room temperature for 15-20 minutes while the salmon bakes, Serve alongside the baked salmon.

I've been told raspberry vinegar is nice - I think I'll look for it next time I'm shopping.

Lyndsay Wells пишет: @LisaDeeCanada Hello there :-) It's an adaptation of a recipe I had at a friend's house. I added the wasabi (great addition) and omitted salt. I also always use low sodium soy sauce. Do try the raspberry vinegar, it's lovely!

You'll Need:

1 pound ground beef
1/4 cup celery, cut diagonally
1/2 cup green onion, cut diagonally into 1-inch pieces
1/4 cup green bell pepper, chopped
1 1/2 teaspoons minced garlic
1 cup water
1/4 teaspoon toasted sesame oil
2 tablespoons cornstarch
1 teaspoon sugar
1/4 teaspoon 5-spice powder
1/4 teaspoon minced ginger root
1/4 cup soy sauce
2 tablespoons water
1 (16 ounce) can chop suey vegetables, drained
1 (10 ounce) package frozen peas
1 (3 ounce) can chow mein noodles
1 cup cashew halves

Procedures : In a skillet cook beef, celery, green onion, green pepper and garlic; drain. Add the water and sesame oil; bring to a boil.

Combine cornstarch, sugar, 5-spice powder, ginger root, soy sauce and water. Add to beef mixture in skillet; cook until thickened and bubbly. Stir in the drained chop suey vegetables; add frozen peas. Turn into a 2-quart casserole. Bake, covered, at 375 degrees F for 1 1/2 hours; uncover and bake 10 minutes more.

To serve, sprinkle individual servings with chow mein noodles, then scatter the cashew halves over the top
