In this video I am going to show you how to make my chile relleno casserole. It's just perfect for entertaining because you just throw everything in a 9 x 13 inch dish and pop it in the oven.
This chili relleno casserole serves quite a few depending on how small you cut the pieces.
It's easy to make and only has a few ingredients like green chiles which are mild, milk, cheese, flour, eggs and salt.
This is a favorite dish of my family as we make this every Christmas eve as part of our Mexican dinner. We love it!
You can also serve this casserole for breakfast, lunch or dinner. The flavors are rich and it is definitely a comfort food that is quick and easy.
You can find the ingredients by going to my website:

Rockin Robin's Cooking Mexican Recipes пишет: Yes you can use fresh chiles for this dish. You need to char them over a flame or grill them on a bbq. I should make a video on that don't you think? You want to blacken them completely, then place in a bowl covered with plastic wrap for about 10 minutes and then peel the blackened part off. cut off the end and remove seeds if you want. That's basically it.

Rockin Robin's Cooking Mexican Recipes пишет: I suppose you could replace the chiles with something else but you would miss out on the "chile relleno flavor". Remember, these chiles are not spicy hot. I guess you could try replacing them with something like bacon or ham.

I prepare my own chili poblanos (that's the SECRET!), I sautee onions, green and red bell peppers, garlic. For spices, I honestly cannot be specific on how much of everything I use because I just wing it with, of course, chili powder, some cayenne, paprika, cumin.... Robin, any more suggestions? I LOVE your videos especially that you explain WHY you use the equipment you use.

You'll Need:
1 to 1 1/2 pounds ground beef
1 (16 ounce) can kidney beans, drained
1 (15 ounce) can enchilada sauce
1 (8 ounce) can tomato sauce
1 tablespoon dried minced onion
1 (6 ounce) package corn chips
2 cups shredded Cheddar cheese
1 to 1 1/2 cups sour cream
Procedures : In a skillet brown the ground beef. Drain off fat. Combine beans, enchilada and tomato sauces in a bowl with minced onion. Set aside 1 cup corn chips and 1/2 cup cheese. Add the remaining cheese and corn chips with the meat to the beans. Stir to blend. Empty into a lightly buttered 2-quart casserole. Bake, uncovered, at 375 degrees F for 20 to 25 minutes or until heated through.
Spread the top with sour cream and sprinkle with the reserved cheese. Ring the remaining corn chips around the edge; return to the oven for 3 to 4 minutes, or until the cheese melts. This will double or triple easily for a large group. May be made ahead and refrigerated
