You'll Need:

2 eggs
2 egg yolks
1/2 cup plus 3 tablespoons granulated sugar, divided
6 tablespoons lime juice
2 teaspoons grated lime peel
12 cup cold butter or margarine, cubed
1 cup whipping cream
1/2 teaspoon vanilla extract
1 (10-inch) prepared angel food cake
1 cup flaked coconut, toasted

Procedures : In the top of a double boiler, beat eggs and yolks. Stir in 1/2 cup of the sugar, lime juice and peel. Cook over simmering water while gradually whisking in butter. Cook and stir until mixture is thickened and reaches 160 degrees F. Strain; refrigerate until completely cool.

In a mixing bowl, beat whipping cream and vanilla extract until stiff peaks form; gradually beat in remaining sugar. Gently fold into lime mixture.

Split cake horizontally into three layers. Place bottom layer on a serving plate. Spread with 2/3 cup lime mixture. Repeat. Place top layer on cake. Frost top and sides with remaining lime mixture. Sprinkle top and sides of cake with coconut. Refrigerate for at least 30 minutes before slicing.

1 pound russet potatoes, peeled and quartered
2 (1/4 ounce) packages active dry yeast
1 1/2 cups warm milk (110 to 115 degrees F)
1/2 cup vegetable oil
1/2 cup granulated sugar
2 eggs
1 teaspoon salt
7 1/2 cups all-purpose flour
Oil for deep-fat frying
4 cups confectioners� sugar
1/3 cup water
1 teaspoon vanilla extract

Procedures : Place potatoes in a saucepan and cover with water. Bring to a boil; cook until tender. Drain, reserving 1/2 cup cooking liquid. Cool to 110 to 115 degrees F.

Discard remaining cooking liquid. Mash potatoes without milk or butter.

In a large mixing bowl, dissolve yeast in reserved cooking liquid. Add mashed potatoes, milk, oil, sugar, eggs and salt. Add enough flour to form a soft dough. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.

Punch dough down; let rise again until doubled, about 20 minutes. Roll out on a floured surface to 1/2 inch thickness. Cut with a floured 3-inch doughnut cutter.

In an electric skillet or deep-fat fryer, heat oil to 375 degrees F. Fry doughnuts, a few at a time, until golden brown.

Combine confectioners' sugar, water and vanilla extract; dip warm doughnuts in glaze. Cool on wire rack.

You'll Need:

3 packages dry yeast
5 eggs
1/2 teaspoon ground nutmeg
2 tablespoons salt
1 teaspoon lemon juice
1 cup shortening
4 cups milk
Flour

Procedures : Put yeast into enough warm water to cover. Let activate.

Mix sugar, shortening and eggs. Add potatoes and remaining ingredients, except the flour. Mix. Add enough flour to make a soft dough. Let rise.

Roll out and cut. Let rise again, then fry

Cupcake / Donut Recipe:
260g / 9oz Plain flour, sifted
225g / 8oz Caster sugar (USA - granulated)
250g / 8.8oz Butter, softened
110g / 3.8oz Whole milk
3 x 65g/2.2oz Eggs, room temperature (ex-large)
40g / 1.4oz Vegetable oil
3 tsp Baking powder
1 tsp vanilla
1.5tsp cinnamon powder
0.5tsp ground nutmeg
Additional 1/2 cup caster (superfine) sugar mixed with additional 1.5tsp cinnamon & 0.5tsp nutmeg for rolling your donuts
1 cup good quality raspberry jam/jelly

Frosting Recipe:
650g / 1lb 7oz Powdered sugar
225g / 8oz Butter, softened (eqv. 2 sticks)
1tsp vanilla
1-2 tbsp Whole milk
1.5tsp cinnamon powder
0.5tsp ground nutmeg

You'll Need:

1 cup milk
1/4 cup plus 2 tablespoons granulated sugar
1 tablespoon plus 1 teaspoon dry yeast
3 cups all-purpose flour
3/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon freshly grated nutmeg
2 egg yolks
3 tablespoons melted butter
1 tablespoon lemon zest
6 cups vegetable oil
2 cups Raspberry Filling
1 egg, beaten
Confectioners' sugar, for garnish

Procedures : In a small saucepan, heat milk to a boil. Remove from heat, add sugar and cool to 110 degrees F.

Mix together warm milk and yeast and let sit for a few minutes. Transfer to a large bowl.

Sift together flour, salt, cinnamon and nutmeg. Using a wooden spoon, add flour mixture to the milk mixture. Mix in egg yolks, melted butter and lemon zest. Turn mixture out onto a well-floured surface. Knead to form a dough. Place dough in a clean, lightly oiled bowl and cover with a towel. Place in a warm, draft-free area and let rise for 1 1/2 hours.

Remove dough from bowl and place on a floured surface. Roll out the dough to 1/8-inch thickness. Using a 3-inch round cookie cutter, cut the dough into 24 circles. Place 12 of the circles on a parchment lined sheet pan. Spoon 1 teaspoon of filling into the center of each circle. Brush beaten egg around the perimeter of each of the 12 circles. Place another circle on top of the raspberry filling and press around the edges to seal. Cover the tray with a towel and let rise another 30 minutes in a warm, draft-free location.

In a large, deep pot, heat the oil to 325 degrees F. When the doughnuts have risen, fry them in the oil, a few at a time, turning often until both sides are golden brown, about 6 minutes. Remove to a paper towel-lined plate and sprinkle with powdered sugar.

Raspberry Filling
1 pound raspberries plus 1/2 cup whole raspberries
1 cup granulated sugar
1 tablespoon lemon juice
1/2 teaspoon cornstarch mixed with 1/2 teaspoon cold water

In a saucepan, combine 1 pound raspberries, sugar and lemon juice. Cook over low heat until sugar dissolves and raspberries begin to break down. Remove from heat and transfer to a food processor. Puree until smooth. Strain through a fine mesh strainer into a saucepan. Cook over medium heat for 10 to 15 minutes, stirring occasionally.

Add in 1/2 cup whole raspberries. Cook for 1 more minute. Remove from heat, whisk in cornstarch mixture. Return to high heat, bringing to a boil, whisking constantly until mixture is thick. Remove from the heat and cool.

Yield: 1 1/4 cups filling - 12 doughnut

You'll Need:

2 cups Bisquick
1/4 cup granulated sugar
1 teaspoon ground nutmeg
1/4 teaspoon cinnamon
1/2 cup sour cream
1 egg
1/2 cup granulated sugar
1 teaspoon cinnamon
3 tablespoons butter, melted

Procedures : Heat oven to 425 degrees F.

Mix Bisquick, 1/4 cup sugar, nutmeg, 1/4 teaspoon cinnamon, the sour cream and egg until soft dough forms. Gently smooth dough into ball on floured cloth-covered board. Knead 10 times. Roll dough 1/2-inch thick. Cut with floured 2 1/2-inch doughnut cutter. Lift doughnuts carefully with spatula and place about 2-inches apart on ungreased cookie sheet. Bake until golden brown, 8 to 10 minutes.

Mix 1/2 cup sugar and 1 teaspoon cinnamon. Immediately brush entire doughnut with melted butter; dip into sugar mixture, coating all sides. Or, if desired, spread with a confectioners' sugar and milk glaze.

Yield: 10 to 12 doughnuts

Ingredients:

-Old Fashioned Dough
2 cups cake flour
2 tbsp butter
1/4 cup sugar
1 egg yolk
1/3 cup sour cream
1 tsp baking powder

-Glaze
3 tbsp cream cheese
3-4 tbsp water
1 cup powdered sugar
2 tsp vanilla extract or paste (fresh pods work as well)
You'll Need:

1 cup granulated sugar
3/4 cup thick sour cream
1 teaspoon baking soda
1 teaspoon baking powder
1 cup sour milk
3 eggs
Flour - enough to make a soft dough

Procedures : Cream the sugar and rich cream together. Beat the eggs with a fork in a small bowl and add to the cream and sugar.

Sift dry ingredients and add a small part at a time with the sour milk. Sift in three cups of flour and then add about one cup or the amount necessary to make a soft dough. This dough is more easily handled if chilled a little. Roll the dough out on a floured board and cut with floured cutter. Do not handle the dough more than necessary or it will become tough. Fry in shortening or oil at 350 degrees F.

Drain on paper towels and roll in sugar or shake in a bag of suga

Raspberry Filled Jelly Doughnuts

You'll Need:

6 tablespoons butter or margarine, melted
3/4 cup granulated sugar
3/4 teaspoon cinnamon
1/3 cup raspberry jelly
10 ounces Hungry jack fluffy biscuits

Procedures : Heat oven to 375 degrees F.

Place melted margarine in small bowl.

In another small bowl, combine sugar and cinnamon; set aside.

Stir jelly until smooth. Seal tip of large baster with foil. Remove rubber bulb. Spoon jelly into baster; replace bulb.

Bake biscuits as directed on can. Immediately dip each hot biscuit into melted margarine, coating all sides. Roll in sugar mixture, heavily coating all sides of each biscuit. Insert baster in side of each biscuit; squeeze small amount of jelly into center. (Refill baster as needed.)

Serve warm or cold

Here's how I made yeast raised doughnuts. This recipe is excellent and very much like ones you'd buy in a bakery. They are light as a feather! I found this recipe on a blog called Hopefulthings. I made mine in a bread machine but if you'd like instructions for mixing them by hand, I am providing a link to Hope's blog. Be sure to check her out!

Yeast Raised Doughnuts

1 1/4 cups warm water
1 1/4 tbsp. dry yeast
1 tsp. sugar

1/3 cup sugar
1/4 cup shortening
1 egg, beaten
1/2 tsp. salt
1 tsp. vanilla extract
1/4 tsp. nutmeg
3 1/4 cups all purpose flour
shortening for frying the doughnuts in

Glaze:
2 cups powdered sugar
1/2 tbsp. cornstarch
1/4 cup water
1/2 tsp. vanilla

Add 1 cup of the warm water to the bread machine, reserving 1/4 cup to start the yeast in. Add the yeast and 1 tsp. of sugar to the reserved water. Stir to mix well and set aside. Add the rest of the ingredients to the bread machine and when the yeast has proofed, add it as well. Set the bread machine on the dough cycle. When the dough is ready, turn out onto a floured surface and punch down. Let rest for 10 minutes. Roll out to 1/2" thickness and cut out doughnuts. Place on a very lightly greased and floured baking pan turned upside down. Lightly cover with plastic wrap and let rise for about 30 minutes or until double in size. Mix together the glaze ingredients and set aside. Very carefully remove the doughnuts from the baking pan and drop into a pot or deep fryer full of shortening which has been brought to a temperature of 350 to 360 degrees. Fry until lightly brown then flip the doughnut over and fry on the other side. This takes about 1 minute on each side. Remove the doughnuts from the oil and place on a paper towel to drain. Dip in glaze while still warm. Makes about 3 dozen, and this can vary depending on the size of your doughnut cutter, whether or not your doughnuts have holes in them and the thickness you cut the doughnuts.

Note: I would not substitute anything else for the shortening in this recipe. You are not likely to get the same results.

Procedures : Dissolve yeast in warm water. Stir in milk, cup sugar, salt, egg, shortening and 2 cups of the flour. Beat until smooth. Mix in enough remaining flour to make dough easy to handle. Turn dough onto a lightly floured cloth-covered board. Knead until smooth and elastic, about 5 minutes. Place in a greased bowl; turn greased side up. Cover; let rise in warm place until double, about 1 1/2 hours.

Punch down dough; let rise again until almost double, about 30 minutes.

Roll dough 3/8 inch thick on lightly floured, cloth-covered board. Cut dough with floured doughnut cutter. Let rise on board until double and very light, 30 to 45 minutes (leave uncovered so crust will form on dough).

Heat fat or oil (3 to 4 inches) to 375 degrees F in deep fat fryer or kettle. Drop doughnuts into hot fat. Turn doughnuts as they rise to the surface. Fry for 2 to 3 minutes or until golden brown on both sides. Carefully remove from fat; do not prick the surface. Drain.

While warm, roll doughnuts in sugar or, if desired, frost or glaze. Makes 2 dozen.

Glaze
1/3 cup boiling water
1 cup confectioners' sugar
2 teaspoons lemon extract
1 teaspoon vanilla flavoring

Blend well. Dip warm doughnuts into warm glaze

RECIPE:

Ingredients
2 cups milk, warmed
4 eggs
2 cups flour
2 tsp salt
1 cups grated Gruyere cheese


Place the popover pan in the oven. Heat the oven and pan to 350 degrees. Gently warm the milk over low heat and set aside. Whisk the eggs until frothy and slowly whisk in the milk (so as not to cook the eggs). Set the mixture aside. Sift the flour with the salt. Slowly add this dry mixture and gently combine until mostly smooth.
Once combined, remove the popover pan from the oven and grease LIBERALLY — the top as well as inside the cups. While the batter is still slightly warm or room temp (definitely not cool), fill each popover cup full. Top each popover with approximately 2 Tbsp of the grated Gruyere.
Bake at 350 degrees for 50 minutes, rotating pan half a turn after 15 minutes of baking. Remove from the oven, remove from the pan and serve immediately.
I don't see any reason why the Gruyere couldn't be optional. If you don't have any and/or don't want to break the bank to buy some, try the recipe without and let me know how it turns out.

Procedures : Reserve 1 1/2 tablespoons pineapple syrup for glaze.

To pineapple, add egg, biscuit mix, sugar and nutmeg; stir into stiff dough.

Heat shortening to 375 degrees F. Drop dough by teaspoonsful into hot fat; fry to golden brown, about 3 minutes, turning once. Remove with slotted spoon; drain on paper towels.

Dip some of donuts in pineapple glaze, others in confectioners' sugar or cinnamon sugar. Serve warm.

Makes 2 1/2 to 3 dozen.

The VicRoads Team Leaders created this piece in a single 2-hour lyric-writing, song-writing, performing, recording spectacular at Mount Eliza Business School on 6th September 2012. Our team created this song from scratch at our Ambient Orchestras team development and leadership workshop. We used various lyric-writing methods including the David Bowie technique. Our bands, The Good Time Goose and The Delicious Pineapple Dooughnuts are proud of the efforts - in only 2 hours we collaborated to create these pieces together. You'll Need:

1 (8 1/2 ounce) can crushed pineapple
1 egg, slightly beaten
2 cups biscuit mix
3 tablespoons granulated sugar
1/4 teaspoon nutmeg

OLD FASHIONED CAKE DOUGHNUTS

4 cups all-purpose flour, plus extra for rolling dough out
1 cup sugar
4 teaspoons baking powder
1 1/2 teaspoon salt
1/2 teaspoon nutmeg
1 cup buttermilk or milk
1/4 cup butter, melted
2 eggs
3-4 cup vegetable oil, used for frying doughnuts

1. In a large mixing bowl add sugar, baking powder. salt and nutmeg. Whisk well.

2. Add melted butter, eggs and buttermilk to sugar mixture and mix until combined.

3. Add 3 cups of flour to wet mixture, beat until blended. Add 1 cup of additional flour. Combine with wooden spoon until well blended. Dough should be sticky but firm to handle. Add 1/2 cup or more of flour it needed.

4. Cover dough with plastic wrap and refrigerate for 1 hour or more.

5.Add oil to 10 inch skillet and heat over medium heat until temp on oil reaches 365 degrees F.

6. Remove half the dough from refrigerate and roll out 1/2 inch thick. Cut dough into doughnut shapes by sing a 3 inch round circle. Use a 1" circle to make and remove doughnut center.

7. Add doughnuts and centers to hot oil, be sure not to over crowd, Fry for 2 1/2 minutes, flip and fry 1 more minute or until doughnuts are light and golden brown.

8. Remove doughnuts from oil and drain on paper towels. Cool

9. Glaze doughnuts, toss in sugar & cinnamon or powder sugar. Frost doughnuts and add sprinkles if desire.

GLAZE FOR DOUGHNUTS

2 cups Powder Sugar
1/2 teaspoon pure vanilla extract
1/2 teaspoon honey
3-5 tablespoons of water

Add powder sugar, honey and vanilla into a deep mixing bowl. Add water, 1 tablespoon at a time, until glaze will coat doughnuts.

SUGAR & CINNAMON COATING FOR DOUGHNUTS

1/2 cup sugar
1 teaspoon cinnamon

Toss sugar and cinnamon well together. Gently toss doughnuts.



ENJOY!!
You'll Need:

1/2 cup milk
1 teaspoon salt
2 packages yeast
3 eggs, separated
1/3 cup granulated sugar
1/3 cup butter
1/2 cup warm water
3 3/4 cup flour
Vegetable oil for frying
Sugar
Jelly

Procedures : Scald milk; add sugar, salt and butter. Add yeast to warm water. Stir in milk mixture, egg yolks and 2 cups flour. Add remaining flour. For jelly filled, roll dough about 1/4-inch thick. For regular doughnuts, roll about 3/8 to 1/2-inch thick and cut.

Jelly Doughnuts: Place 1 teaspoon jelly on circle and brush top circle with egg whites on one side and seal. Fry at 375 degrees F until done

Ingredients:
5 cups of All Purpose Flour, plus a bit more if the dough is sticky
2 (7gr) Envelopes of Yeast
1/3 cup of Granulated Sugar
1-1/2 cups of Whole Milk, warmed to about 115 degrees
1/4 cup of Unsalted Butter, melted
1/4 cup of Shortening, melted
2 Eggs
3/4 tsp of Salt
You'll Need:

4 to 4 1/2 cups white bread flour, plus more for dusting
1 teaspoon salt
2/3 ounce (.6 ounce) cake fresh yeast or 1 envelope dry
active yeast (2 1/2 teaspoons)
1 cup lukewarm milk
2 tablespoons granulated sugar, plus more for dusting
2 large eggs, beaten
2 tablespoons unsalted butter, melted and cooled
1/2 cup preserves of choice
Vegetable oil, for frying
Cinnamon and sugar, for rolling doughnuts

Procedures : In the bowl of a mixer, combine 4 cups flour and salt. Add the yeast.

In a small bowl, combine the milk and 2 tablespoons sugar. Add with the remaining milk to the flour. (If using dry yeast, mix the yeast with 2 tablespoons of the milk and 2 tablespoons sugar and let sit until foamy, about 5 to 10 minutes and add to the flour.)

Add the eggs and butter to the flour mixture. Begin to mix the ingredients into a soft, but not sticky, dough. Add a little extra milk, 1 tablespoon at a time. Work in extra flour, 1 tablespoon at a time. Turn the dough out onto a lightly floured surface and knead until smooth and elastic. (You can do this in a mixer fitted with a dough hook.) Transfer the dough to a lightly oiled bowl, cover, and let rise until doubled in size, about 2 hours.

Punch down the risen dough. Turn out onto a lightly floured surface and knead for a few seconds. With a lightly floured rolling pin, gradually roll out the dough to about 1/2 inch thick. When rolling dough, let it rest periodically to relax. Cut out into 3- to 4-inch rounds with a lightly floured biscuit cutter. Re-roll the scraps to make more rounds. Place the doughnuts on lightly floured baking sheets, spacing them apart, and cover lightly with a dry towel. Let rise in a warm spot until doubled in size, about 20 minutes.

Transfer the risen doughnuts to a heavy pot filled 3 inches high with vegetable oil at 350 degrees F. Fry the doughnuts, a few at a time, until golden and puffed, turning frequently, 5 to 7 minutes.

Lift the doughnuts from the oil using a slotted spoon and roll on a plate lined with granulated sugar and cinnamon mixed together. Let cool slightly and fill a pastry bag, fitted with a 1/2-inch round tip with jelly preserves. Insert the tip into the end of each doughnut and pipe approximately 1 to 2 teaspoons preserves into them and serve.

You'll Need:

6 tablespoons butter or margarine, melted
3/4 cup granulated sugar
3/4 teaspoon cinnamon
1/3 cup raspberry jelly
10 ounces Hungry Jack fluffy biscuits

Procedures : Preheat oven to 375 degrees F.

Place melted butter in a small bowl.

In another small bowl, combine sugar and cinnamon; set aside.

Stir jelly until smooth. Seal tip of large baster with foil. Remove rubber bulb. Spoon jelly into baster; replace bupound Bake biscuits as directed on can. Immediately dip each hot biscuit in melted margarine, coating all sides. Roll in sugar mixture, heavily coating all sides of each biscuit. Insert baster in side of each biscuit; squeeze small amount of jelly into center. (Refill baster as needed.)

Serve warm or cold
