Greek Farmers Bread

Greek Farmer's Bread - Bread Recipes - Greek Recipes








You'll Need:

* 500 grams unbleached white flour
* 4 teaspoons instant yeast
* 2 teaspoons sugar
* 300 milliliters lukewarm water
* 1 Tablespoon oil
* 2 teaspoons salt

Procedures : Put the flour in a bowl. Make a well in the middle. Put the yeast and the sugar in the well. Pour water over. Mix slightly. Cover and put in a warm place for 15 minutes. Knead, adding the salt and oil, to a smooth elastic dough. Cover and put in a warm place for 15 minutes. Knead thoroughly and place on a baking sheet. Cover and put in a warm place for 15 minutes. Put in a cold oven and turn oven on to 375 degrees F. Bake 40 to 45 minutes until golden brown. Let cool 20 minutes before slicing

Ingredients

170 Grams ( 6 Ounces ) of butter
175 Grams ( 6.17 Ounces ) of white sugar
2 Eggs
50 Mills of Orange juice
1 grated orange rind
30 Grams ( 1.05 Ounces ) of baking powder
3 Cups of plain flour
1 Egg
1 Tablespoon of water
1 Teaspoon of vanilla extract

* 8 cups sifted all-purpose flour
* 2 teaspoons baking powder
* 1 tablespoon grated orange rind
* 1 egg

Procedures : Sift together flour and baking powder and set aside. In large bowl, cream together butter and sugar. Add 4 egg yolks one at a time, beating well after each one. Add milk and flour. Work with the hands until dough is smooth. Add grated orange rind. Dough should be stiff so add additional flour if needed. Break off small portions of dough and roll out into pencil-size strips about 11 inches long. Fold each strip into thirds, sideways, and press lightly together at ends. Place cookies on ungreased baking sheet. Brush tops with beaten egg. Bake at 350 degrees F (175 degrees C) for 18 to 20 minutes

Procedures : Dissolve the yeast in the warm water. Combine the sugar, cardamom, salt, egg, milk and oil in a large bowl. Mix well. Add the yeast mixture, flours, raisins and nuts. Mix well. Add enough extra flour to make soft dough. Turn the dough out onto a floured surface and knead until smooth and elastic, about 5 minutes. Shape into a round loaf.

Put the dough into a lightly-oiled 8-inch-round cake pan. Cover with a damp towel and let rise in a warm place until doubled in bulk, about 1 hour. Bake in a 350-degree oven 35 to 40 minutes, or until brown

You'll Need:

Filling
* 500 gr. walnuts, coarsely chopped
* 60 gr. sugar
* 1 teaspoon cinnamon

Pastry
* 500 gr. fyllo pastry
* 180 gr. unsalted butter, melted

Syrup
* 230 gr. caster sugar
* 300 ml water
* 2 cinnamon sticks
* 2 teaspoons lemon juice
* some lemon peel
* 2 tablespoons honey

Procedures : Mix all the filling ingredients in a bowl.
Liberally butter the base and sides of an elongated or round baking dish. Measure the length of the fyllo against the baking dish roughly and, allowing 2 cm extra approximately for shrinkage, cut to length with a sharp knife. Brush each layer of fyllo with melted butter and spread over the base of the container as evenly as possible. Once you have used 5 layers of pastry, sprinkle a thin layer of filling all over the surface and add 3 more layers. Sprinkle a thin layer of filling and place 2 more sheets of fyllo on top. Sprinkle on all the remaining filling, spreading it evenly, and cover with 7-8 more layers of fyllo, brushing individually with butter. Fold any excess pastry on either of the sides over the filling and brush it with butter. Brush the top layer liberally with butter in order to get it crisp and golden. Trim any excess pastry with a small sharp knife, keeping in mind that it will also shrink. Cut the top layers of fyllo carefully, either diagonally into diamond shapes or straight, which will result in square or elongated pieces. Be careful not to cut right down to the base, but only the top layers. This is done in order to make cutting and lifting the pieces out, once it is cooked, much easier and efficient. Using the tips of four fingers, sprinkle drops of water all over the surface and cook it in a preheated oven, gas no.5/ 375 grades F / 190 grades C, for 15 minutes; lower the heat to gas no.4/ 350 grades F/ l80 grades C and cook for a further 20 minutes.
In the meantime, prepare the syrup. Place all the syrup ingredients, apart from the honey, in a saucepan and stir to dissolve the sugar. Simmer for 6-8 minutes, add the honey and simmer for a further 5 minutes until it thickens slightly. Let the baklava cool down then pour the hot but not boiling syrup slowly all over, through a strainer. Let it stand and absorb the syrup

* 1 lb Commercial filo sheets

Procedures : Defrost frozen filo to room temperature, 2 to 4 hours. Mix filling in a bowl tossing ingredients with a spoon. Set aside. Lay 5 sheets filo flat, one on top of each other, with a little melted butter brushed between the sheets. Spread 1 cup of filling along one end. Roll filo over the apple filling so you will have a long filled tube. Fold side edges over 1/2" so filling won't fall out. Continue rolling. Place in a buttered baking pan or cookie sheet. Brush tops generously with melted butter. Bake at 350 degrees for 1 hour. Sift powdered sugar over tops and sides as soon as it is taken out of the oven and while still hot. When cool, cut into 2" pieces and serve

Greek Almond Biscuits

Makes about 100 cookies, depending on the size you make them.
Ingredietns:
2 Pounds Unsalted Sweet Cream Butter
4 Tablespoons Granulated Sugar
4 Egg Yolks
2 Cups Sliced Almonds
1/2 Cup Brandy
7 Cups Unbleached All Purpose Flour
2 Bags Worth Powdered Sugar

Directions:
Preheat Oven to 325 Degrees F
Toast Sliced Almonds until light golden brown.
Cream Butter until it is light and fluffly "The longer you beat the butter the fluffier the cookies will be". When butter is white and fluffy add in the sugar and continue to beat. After abou 1 minute of beating with the sugar start to add the egg yolks, one at a time. Once the yolks have been combined well start to add the brandy very slowly, once all combined add in the crushed toasted almonds and mix well. Then start to add the flour a little at a time, if the dough becomes to thick for the mixer finish adding the flour by hand.

Once you can form a ball you can form the rest of the dough. Try to make each cookie the same size for even baking. Make them into small round disks and then place them on a cookies sheet with parchment paper. Bake the cookies for about 30 minutes or until the bottom of the cooies are golden brown. Watch these cookies carefully, they are easy to over bake.
Foil your table and line it with wax paper. Then generously sift powdered sugar over it. Remove cookies straight from the oven and place them onto the powdered sugar, then generously sift powdered sugar over them while they are still hot. Overly cover them because the hot cookie will soak in the sugar. Then let the cool and enjoy!!

* 3 cups almond meal
* 1 cup caster sugar
* 3 drops almond essence
* 3 egg whites, lightly beaten
* 1 cup flaked almonds

Procedures : Combine the almond meal, sugar and almond essence in a large bowl. Add the egg whites and stir until the mixture forms a firm paste. Do not overmix. Roll a tablespoon of the mixture into the flaked almonds, and then roll into an 8cm long roll. Repeat until all the mixture is used. Press the remaining almonds onto the rolls. Shape the rolls into crescents or other shapes, and place on baking paper-lined oven trays. Bake in a moderate oven (180c) for about 15 mins or until lightly browned. Cool on trays

Tip: In some regions of Greece they cover the fish with thick salt, they grill it and then they remove the crust of salt that has created and they eat it. With this procedure they do not burn the fish and they manage to give a salty taste to eat as well

* Salt and black pepper
* 3 tablespoons finely chopped parsley

* 1 teaspoon thyme

Procedures : Pick the beans clean from stones and grit and soak them in cold water overnight. Drain and rinse them in a colander, put into a large saucepan or a pressure cooker, cover with plenty of cold water and boil them until they are cooked but still a little hard. This type of bean cooks quickly, so be aware until you get used to them. They take hardly 2 minutes in a pressure cooker and about 30-40 minutes otherwise. If they get overcooked, they get mushy and soggy and they do not taste at their best. This first step then is also the most important in this recipe.
Drain the beans through a colander and keep aside. In the same saucepan, heat the olive oil and fry the onions, the garlic and the dried herbs, until they start turning pale golden. Add the tomatoes with all the juice from the cans or, if fresh tomatoes are used, add 150 ml water. Then add the tomato puree and sugar, break up the mixture with a fork, season with salt and pepper, cover and cook for 30 minutes or until the sauce thickens.
Mix the parsley into the tomato sauce, add the beans and mix well. Spread the beans in an oven dish. Sprinkle a little oregano and black pepper on the top and cook in a pre-heated oven at 350 grades F / 80 grades C, for 30 minutes, without stirring, until they look slightly crisp on top and quite dry.
Alternatively, add the beans to the tomato sauce, mix well, cover and simmer for 10-15 minutes

Garlic Sauce with Chestnuts

Duck Breast with Gingerbread Spice, Grape and Chestnut Sauce and Pumpkin Swirls

DUCK BREASTS:
3 duck breasts (about 380g each)
5 tablespoons pomegranate molasses
2 tablespoons gingerbread spice mix (mixed spice)
½ teaspoon ground black pepper
½ teaspoon ground coriander seeds
PUMPKIN SWIRLS:
1 small orange pumpkin
5 tablespoons olove oil
1 tablespoon honey
1 teaspoon ground cumin
1 teaspoon sesame seeds
¼ teaspoon sumac
½ teaspoon fresh thyme leaves
Grated rind of 1 lemon
½ teaspoon salt
Ground black pepper
GRAPE & CHESTNUT SAUCE:
1 tablespoon olive oil
1 finely chopped shallot
150ml vegetable stock
1 - 2 tablespoons pomegranate molasses (to taste)
0.1g saffron
1 tablespoon butter
125g seedless green grapes
Ground salt and pepper to taste


Method:
1. Preheat Neff VarioSteam oven to 180°C on CircoTherm setting. Score the fatty side of the duck breast in a criss-cross pattern. Stir the gingerbread spice mix into the molasses. Place a wire rack on top of a baking tray and put the duck breasts on the rack with the fatty side facing upwards. Coat the fatty side with the molasses. Season with pepper and coriander seeds and place in the refrigerator.
2. Coat all holes of a six-hole muffin tray with olive oil. Cut the pumpkin into quarters, remove seeds and peel. Slice the flesh (there should be approx. 400g) into fine strips with a vegetable peeler. Put the pumpkin slices into a bowl and mix them with the remaining ingredients. Season with black pepper. Fill up the holes of the muffin tray with the mixture.
3. Place the pumpkin swirls onto a wire rack on shelf position 1 (lowest shelf position). Insert the baking tray containing the duck breasts into shelf position 4. Cook everything for 20 minutes at high steam intensity.
4. In the meantime, saute the finely chopped shallots in a pot with olive oil. Deglaze with the vegetable stock and simmer for five minutes. Add the chestnuts, the pomegranate molasses, the saffron, butter and halved grapes. Bring the sauce briefly to the boil. Season with salt and pepper.
5. Turn off the steam and set the large grill to 250°C. Bake the duck breast fillets for 4 minutes until the skin is crisp. Salt the duck breasts and leave to cool. Then cut them into slices
6. Remove the pumpkin slices from the muffin tray and place them on pre-warmed plates. Garnish with sesame seeds and chilli flakes. Serve the duck breast slices with the sauce.

* 3 cups of peeled boiled chestnuts
* 5 cloves of garlic
* vinegar
* salt

* 1/2 kg breadcrumb
* olive Oil
* vinegar

Procedures : Wet the breadcrumbs in the water and then drain them well. Clean and crush garlic in a mortar or using a fork. Mix the drained breadcrumbs with the garlic. Stir well the mixture with a mixer until a smooth paste is obtained. Add olive oil and and vinegar gradually while stiring the mixture

Ingredients

Directions

3 tbsp cashewnuts
6 clove garlic
1 stick ginger
250 grams mushroom
2 number onions
1-2 number tomatoe puree
1 cup whisked yogurt
slice mushroom and boil them in hot water for 2 min and keep them aside. Next boil onions in water till they are soft, then make a paste of boiled onino, ginger, garlic and cahewnuts. Now heat some oil in a pan add to whole garam masala(cinnamom, big and small cardomom, clove, bay leaves, mace yhhen add to it tha above prepared onion paste, salt,fry it for few minutestill lite brown then add to it ired chilli pwd, chopped green chillies, very little cumin and corriander pwd donta add too much of it, a little garam masala powder, tomato puree and whisked yogurt mix it properly fry till the oil oozes out next add to it sliced mushroom and mix it properly add very little water and cook for 2min . garnish with corriander leave and serve it with phulka

You'll Need:

* 75 grams butter
* 750 grams fresh small mushrooms
* 1/2 tspn lemon juice
* 4 garlic cloves, crushed
* 1 spoon finely chopped parsley
* Salt
* Pepper
* 2 spoons yoghurt (for each plate)

You'll Need:

* 250 gr. any hard cheese, kefalotyri Parmesan, Gruyere or Greek Cypriot haloumi
* 50 grams butter
* lemon juice of 1/2 lemon
* black pepper

Procedures : Cut the cheese into 1 cm thick slices. Heat the butter in a frying pan and put the slices in. Turn the heat down a little and let it cook for 1-2 minutes until it bubbles. It should not turn brown, but should look creamy and sticky. In Greece the cheese is usually cooked in small frying pans, so they can be taken straight to the table. Sprinkle a little lemon juice on top and some black pepper and offer it with fresh bread

Real easy, real good. This is a great recipe for beginners. Even if you think you can't cook, you can still make this :)
You'll Need:

* 500 gr flour
* 1 sachet dried yeast
* 1 tspn salt
* olive oil
* Warm water
* 250 gr soft salted mitzithra cheese (resembles ricotta cheese)
* Fresh or dried oregano
* Oil for frying

Procedures : Add the flour, the salt and the yeast in a bowl. Gradually add the water and work the mixture with your hands to become a soft and tight dough. Seperate the mixture in even portions and roll out each one. Place on the center of each filo sheet one spoon mitzithra cheese and some oregano. Fold the dough pieces carefully and shape them into balls. Carefully place them on a bench and roll them out again giving them a round shape of the size of a small plate.

Fry each filo in plenty of oil until they take a rosy colour. Serve them warm

Fried aubergines

You'll Need:

* Some aubergines
* Oil
* Salt
* Flour

Procedures : Wash the aubergines and cut them into thin slices of 1 cm wide. Salt them and dip them in the flour. Fry them in hot oil. Let them drain afterwards using an absorbing kitchen towel for this purpose

Fresh mushrooms

You'll Need:

* 500 gr fresh mushrooms
* 300 gr onions
* 250 grams dry white wine
* dill
* oregano
* 1 tspn tomato paste
* 4 tspn olive oil
* salt
* pepper

Procedures : Add the olive oil, the tomato paste and the wine into a saucepan. Stir and heat in low temperature. Rinse and slice the mushrooms. Chop the onions. Place the onions and the mushrooms into the saucepan together with salt, pepper, oregano and dill. Cook for 30 minutes and serve warm
