I really tried this recipe and it was really good. It kind of tasted like Raita but with a twist. Also I made Biryani so this was a perfct cooling recipe for the body.

You'll Need:

3/4 cup blanched almonds
3 cloves garlic, peeled
1/2 tsp salt
4 slc stale white bread, crusts removed.
4 cup ice water
7 tbsp olive oil
3 tbsp white wine vinegar
2 tbsp sherry vinegar
1 tbsp butter
6 slc white bread, crusts removed, cut in cubes
1 1/2 cup seedless green grapes

Procedures : Grind almonds, 2 garlic cloves, and salt to a fine consistency in a food processor or blender. Soak stale bread in one cup ice water, and squeeze to extract moisture. Add bread to processor. With processor running, add 6 tb oil and one cup ice water slowly in a steady stream. Add vinegars, and mix on high speed for 2 minutes. Add one cup ice water and mix 2 more minutes.
Place in a bowl, add remaining ice water and mix well. Adjust seasonings with salt and vinegar. Chill for up to 6 hours.
Heat butter and remaining one tablespoon olive oil in a skillet. Crush remaining garlic clove and add to pan with bread cubes, tossing to coat with butter and oil. Cook over very low heat, stirring occassionally, 20-30 minutes, or until cubes are golden.
Serve soup ice cold, garnished with croutons and grapes

Roasted Vegetable Soup
1 cup parsnips peeled & roughly chopped
2 cups potatoes peeled & roughly chopped
1 cup sweet potato peeled & roughly chopped
½ cup turnips roughly chopped
1 cup carrots roughly chopped
4 Tbs olive oil
2 tsp dried rosemary
1 tsp dried thyme
½ tsp dried sage
1 tsp sea salt
2 leeks roughly chopped
2 ribs celery chopped
1 Tbs apple cider vinegar
4 to 6 cups veggie broth
1 handful kale de-stemmed & chopped
fresh parsley


1. Make sure to chop the vegetables all the same size so they cook at the same rate.

2. In large mixing bowl, add chopped vegetables, 2 Tbs olive oil, rosemary, thyme, sage and sea salt. Toss around until vegetables are evenly coated in oil and spices.

3. Spread vegetables out on a parchment paper lined cooking sheet and roast in over at 400* for 15 to 20 min. Flip vegetables over and roast for another 15 to 20 min.

4. Cut dark part off leeks and slice through middle lengthwise. Rinse thoroughly and give them a rough chop.

5. Heat 2 Tbs olive oil in large saucepan on medium heat. Sauté leeks until soft, about 5 min. Turn to high heat and stir in celery and roasted vegetables. Add apple cider vinegar and continue to stir. Add veggie broth, cover, bring to a boil then simmer for 20 min. Remove from heat and add kale.

6. Blend with immersion blender until you get consistency you want or let soup cool off and blend in blender i.e. Blendtec.

7. Add sea salt to your liking. Garnish with fresh parsley.

You'll Need:

2 red pepper, seeded and quartered
1 eggplant, quartered
4 tbsp olive oil
salt and ground black pepper
1 large onion, chopped
2 celery stalks, chopped
4 garlic cloves, chopped
1/2 tsp chili powder
1/2 cup all-purpose flour
4 cups hot fish stock
1 cup creamed tomatoes or tomato puree
2 sprigs fresh thyme
1 tsp sugar
9 oz fillet haddock or cod, cut into 1 inch chunks
9 oz raw shrimp
9 oz squid rings
juice of 1 lime
2 tbsp chopped fresh parsley

Procedures : Preheat the oven to 400 F. Place the peppers and eggplant in a roasting pan. Sprinkle half the olive oil on top, season and roast for 25 minutes until tender and a little charred.
Heat the remaining oil in a large pan and cook the onion, celery and garlic for about 5 minutes.
Add the chili and flour and cook for 1 minute, stirring constantly. Gradually add the stock, then the tomatoes.
Cut the peppers and eggplant into 1 inch chunks and add to the pan with the thyme and sugar.
Bring to a boil, cover and simmer for 15 minutes.
Add the seafood to the pan and simmer for an additional 5 minutes until tender. Add lime juice, salt and pepper to taste.
Stir in the parsley, ladle into bowls, and serve with crusty bread and chilled white wine

You'll Need:

2 pt strawberries washed hulled
1/4 cup confectioners' sugar
1/2 cup white wine
1 cup buttermilk
1 pch salt
4 sliced strawberries for garnish

Procedures : In a food processor, finely chop the 2 pints of strawberries with the confectioners' sugar. Add the wine, buttermilk and salt. Blend briefly and chill.
Serve in chilled bowls, each garnished with a sliced strawberry

2 cups organic strawberries
2 tablespoons organic coconut oil
1/4 cup organic basil
1 organic pear
1/2 organic lemon juice and inside (optional)

Blend all ingredients until smooth.

You'll Need:

4 cup hulled coarsely-sliced strawberries
1/2 cup water
4 pear halves canned in juice
1 cup juice from canned pears
2 tsp lemon juice preferably fresh
1/4 cup granulated sugar or more to taste
Strawberry slices for garnish

Procedures : In two batches, combine strawberries and water in blender container. Blend until strawberries are completely pureed. Press mixture through a fine sieve. Discard strawberry seeds.
In batches, if necessary, return puree to blender container. Add all remaining ingredients, except the strawberry slices for garnish, and blend until soup is completely smooth.
Transfer soup to a glass or ceramic bowl. Cover and chill 3 to 4 hours before serving. Garnish with strawberry slices, if desired. This soup keeps 2 to 3 days in refrigerator

Smoked Sausage with Chicken Soup

You'll Need:

3/4 cup flour all-purpose
14 ounces smoked sausage slice 1/4
18 ounces chicken breast halves
1/2 cup green pepper chopped
1/2 cup celery chopped
1 cup Onion chopped
2 quarts water hot
3 cloves garlic mince
2 pinches bay leaf
2 tsp cajun seasoning
1/2 tsp thyme dried
1 tsp Worcestershire sauce
1 tsp hot sauce
1/2 cup green onion chopped
4 cups rice cooked
1/4 cup Chicken broth
1 tsp Olive oil

Procedures : Place flour in a pan and bake for 15 min at 400F until the color of caramel, stirring every 5 min.
Brown chicken in oil. Add broth and saute vegetables. Sprinkle in flour.
Stir in water slowly. Add garlic and remaining ingredients except rice.
Simmer 1 hour. Serve over rice

You'll Need:

3 1/2 cups water
1 package Oriental flavor ramen noodles
1/2 cup green onion chopped
1 medium carrot julienne strips
4 1/4 ounces shrimp insed and drained
soy sauce

Procedures : Heat water to boiling in 3 qt saucepan. Add noodles. Cook about 3 minutes, stirring occasionally, until noodles are tender. Stir in contents of seasoning packet, onions, carrot and shrimp; cook until hot. Serve with soy sauce

You'll Need:

2 whole chicken breasts, halved
6 cup water
Small onion, peeled and chopped
Small bay leaf
2 sprigs parsley
1/2 tsp thyme
1 tsp salt
1/8 tsp pepper
Garlic clove, crushed
2 tsp ground coriander
1 1/2 tsp chili powder
1 tbl soy sauce
1/2 lb raw small,shelled shrimp
2 cup sliced mushrooms
6 scallions, with tops,sliced
3 cup hot cooked rice
1/3 cup chopped fresh coriander

Procedures : Remove skin from chicken breasts. Carefully cut meat from bones and pull out the pieces of cartilage. Cut meat into strips and set aside. Put bones in large saucepan.
Add water, onion, bay leaf, parsley, thyme, salt, and pepper. Bring to a boil. Lower heat and cook slowly, covered, 1 hour. Strain broth into a saucepan. Combine garlic, coriander, chili powder, and soy sauce. Stir into broth. Bring to a boil. Add chicken, shrimp, and mushrooms. Cook slowly, covered, about 5 minutes, until the shrimp turns pink, and the chicken is tender. Stir in scallions and fresh coriander or parsley. Remove and discard bay leaf.
Serve in bowls over or with rice

Jamaican callaloo, one of the national dishes of Jamaica is traditionally cooked with coconut milk and saltfish, Known as bhaji or choria bhaji in Trinidad and Tobago, it's basically Amaranth. Simmered in coconut oil, herbs, garlic and scotch bonnet pepper, this is a wonderful Caribbean style way of cooking greens.

You'll Need...

Jamaican Callaloo
1 tablespoon Coconut Oil (or olive)
1/4 teaspoon sea salt (your fav salt)
1/8 teaspoon black pepper
1/2 medioum onion
3 cloves garlic
1/4 scotch bonnet pepper
1 cup small shrimp (pre cooked)
1/2 cup water
1 medium tomato diced
1 scallion
2 sprigs thyme

You'll Need:

2 pt water or stock
1 large onion
Eschallot, celery, white pepper and salt
1 oz dried shrimp or 6 large prawns
Soya sauce
Fat for frying

Procedures : Chop the onion and saut? lightly.
Add the water or stock, eschallot and celery tied together, pepper and salt.
Season and bring to a simmering point. Allow to simmer for about ? hour.
Clean the shrimps thoroughly and add to the soup. Cook for 5 minutes.
Add finely shredded callaloo or pakchoy. Simmer for a further 3 minutes. Add a few drops of soya sauce.
Serve hot

16-oz can shark's fin
2 tbsp sherry
4 cup water
1 chicken breast

Procedures : Soak dried mushrooms.
Trim scallion stalks; slice ginger root and combine in a pan with canned shark's fin, sherry and water.
Bring to a boil, then simmer, covered, 15 minutes. Drain shark's fin, discarding liquid, scallions and ginger root.
Meanwhile skin, bone and shred chicken breast. Shred soaked mushrooms; cut remaining scallions in 2-inch sections.
Heat oil. Brown scallion sections lightly and discard. Add chicken shreds and stir-fry until they lose their pinkness (about 1 minute).
Add stock, salt, shark's fin, mushrooms, and remaining sherry. Bring to a boil; then simmer, covered, 30 minutes.
Blend cornstarch and remaining cold stock; then stir in to thicken soup, and serve

Red Snapper Soup

You'll Need:

2 sm potatoes
2 sm carrots
1 lb red snapper fillets
4 tsp olive oil
2 cup boiling water
1 tsp white-wine vinegar
1 1/2 tsp salt
2 qt fish broth or canned chicken broth
3/4 cup long-grain rice
2 tbsp fresh flat-leaf parcley, minced
1/4 tsp dried red-pepper flakes
Freshly ground black pepper

Procedures : Peel and cut the potatoes into 1/2-inch dice. Peel and coarsely shred the carrots. Cut the fish fillets into 1/2-inch pieces.
Heat oil in a 6-quart soup kettle. Add the diced potatoes and saute over high heat until lightly browned, about 5 minutes. Add the shredded carrots and saute until slightly softened, about 2 minutes longer.
Add the boiling water along with the vinegar and salt. Simmer until vegetables are tender, about 10 minutes. Add the broth and rice and simmer for 15 minutes. Add the fish and simmer until fish is cooked and rice is tender, about 5 minutes longer. Remove kettle from heat and stir in parsley and hot red-pepper flakes. Adjust seasoning if necessary.
Ladle soup into warm bowls and sprinkle with freshly ground black pepper. Serve immediately

You'll Need:

1 3/4 pounds boiling potatoes
2 garlic cloves, minced
7 cups water
2 cups 1/2-inch cubes Italian bread, toasted lightly
4 tsp extra-virgin olive oil
1/4 cup freshly grated Parmesan
1 pound broccoli, coarse stems discarded, cut into 1-inch flowerets and remaining stems peeled and sliced thin

Procedures : Peel potatoes and cut into 1-inch pieces. In a 4-quart saucepan boil potatoes, garlic, and water, skimming froth, until potatoes, are very tender, about 15 minutes.
Set broiler rack about 1 inch from heat and preheat broiler.
While potatoes are boiling, in a bowl sprinkle bread with oil and salt to taste and toss. On a baking sheet arrange bread in one layer as close together as possible and sprinkle with half of Parmesan. Broil bread until Parmesan is melted, about 1 minute.
Transfer potatoes with a slotted spoon to a bowl, reserving cooking liquid in pan, and with a potato masher mash coarse. Stir potatoes and broccoli into reserved cooking liquid and simmer, partially covered, stirring occasionally, until broccoli is tender, about 5 minutes. Stir in remaining Parmesan and salt and pepper to taste.
Serve soup with croutons

Salsa:
1/2 cup diced fresh pineapple
1 blood orange, peel, pith removed, supremes diced
1 tbsp finely-chopped fresh ginger
1 serrano chile, stemmed, seeded, and minced
2 tbsp fresh lime juice
1 tsp salt
1/4 tsp freshly-ground black pepper

Soup:
1 1/2 tbsp unsalted butter
2 lrg ripe plantains, sliced diagonaly into 1 1/2" pieces
2 tsp dried oregano, crumbled
2 leeks, white parts only, well rinsed, and finely sliced
2 med parsnips, peeled, chopped fine
3 cup chicken stock
3 cup milk
Juice of 1/2 lemon
1/4 tsp freshly-ground black pepper

Procedures : In a small glass bowl, combine all the ingredients for the salsa and toss together gently. Cover and refrigerate for up to 4 hours before using.
In a large heavy skillet, heat the butter over medium heat. Add the plantains with their flat sides down and saute for about 2 minutes, or until slightly softened but not brown.
Turn to the other side, add the oregano, leeks and parsnips, cover the pan and cook until all the vegetables are tender, about 10 minutes, stirring occasionally. Transfer the vegetables to a food processor and puree until smooth, pulsing the machine and scraping down the sides of the machine as necessary.
Add 2 cups of the chicken stock, puree to mix, and transfer the mixture to a medium saucepan. Whisk in the remaining chicken stock and the milk, add the lemon juice, and place the pan over medium-high heat.
When the soup comes to a boil, reduce the heat to low, cover the pan and simmer for 10 minutes, stirring occasionally. Add the salt and pepper. Serve in shallow soup bowls, garnished with a dollop of the salsa

Procedures : Peel the pineapple and remove the hard core. Cut 1 whole slice of pineapple, about 1/4-inch thick. Slice it into 1/2-inch pieces and set them aside for garnish.
Cut the rest of the pineapple into chunks and puree them in a blender. You should have about 2 cups. Put the puree through a strainer and discard the solids. Add sugar and rum to the blender and mix until the sugar is dissolved.
Using a melon-baller, scoop out most of the flesh of the honeydew and cantaloupe into little balls. Set aside.
Pour 1/3 cup of the fruit soup into each of 6 chilled glass dessert bowls. Add the pineapple, melon balls and blueberries to the bowls. Garnish with mint and serve immediately

1 cup chicken white meat, cooked and shredded

Curry Parsnip Soup

ingredients:

1 lb PARSNIPS (chopped for soup)
1 large POTATO (chopped for soup)
1 medium ONION (chopped)
2 Tbsp OLIVE OIL
1 Tbsp CURRY POWDER
1 tsp CUMIN POWDER
1 tsp CORIANDER POWDER
2 cups BROTH (chicken or vegetable)
2 cups WATER
SALT (to taste)
CORIANDER LEAVES (also called cilantro--chopped for garnish)

directions:
In a soup pot, heat olive oil on medium high heat and add onions and cook for 1 minute. Add parsnips and potatoes and continue cooking until the onions are soft. Add curry, cumin, and coriander powder and mix well. Add 4 cups of liquid— ½ broth and ½ water . Bring contents to a boil, add salt, then reduce heat to low, cover, and simmer for 30 minutes. After a half hour the parsnips and potato should be quite tender. For a creamy texture, blend soup as desired—no milk or cream are needed. I like to leave a few chunks of potato unblended, and garnish with chopped coriander leaves.

And as for the babyfood aspect of the dish -- I'm sure it's delicious, but if the texture is a little bland, why not make it more "chowder-like" by taking out some of those veggies and putting them aside while you blend, and then adding them back in once you're done? Or does that make it more of a stew, defeating the soupness you were going for?

You'll Need:

2 onions, peeled and choped
3 tbsp olive oil
10 cloves garlic, halved
8 parsnips, either fresh or pre-roasted
1 3/4 lt chicken stock (3 pints)
1 tsp salt
2 oranges, juice
Black pepper, freshly grounded

Procedures : Soften the onions in the oil in a heavy covered pan. After 10 minutes add the garlic cloves, then the peeled and sliced parsnips, reserving any which have already been roasted to add later.
Cook all the vegetables together for 10 to 15 minutes until they are soft, stirring them occasionally and adding any pre-roasted parsnips a few minutes before the end.
Strain the hot stock into the vegetable mixture, add the salt and some freshly ground black pepper, simmer for 15 to 20 minutes, then liquidize.
Taste for seasoning and add the juice of the freshly squeezed orange

You'll Need:

2 cup cold chicken broth
1 cup fresh orange juice
1 envelope plain gelantine
1 egg white
1 papaya
1 pch salt
1 pch ground cumin
Almonds, chopped
Coconut, grated

Procedures : Pour cold broth into a pot, sprinkle gelatin over top, and set aside to soften for a few minutes.
Beat the egg white until frothy. Add egg white to soup mixture and bring to simmer, whisking constantly until gelatin is fully dissolved and soup is frothy. Allow to cool down for about 10 minutes.
Meanwhile seed and mash the papaya. Then put into a food processor, adding the soup mixture and the orange juice and process to a puree. Season to taste. Refrigate few hours or better overnight. Adjust seasonigs before serving. Garnish with almonds an coconu
