Popover Doughnuts

Popovers

RECIPE:

Ingredients
2 cups milk, warmed
4 eggs
2 cups flour
2 tsp salt
1 cups grated Gruyere cheese


Place the popover pan in the oven. Heat the oven and pan to 350 degrees. Gently warm the milk over low heat and set aside. Whisk the eggs until frothy and slowly whisk in the milk (so as not to cook the eggs). Set the mixture aside. Sift the flour with the salt. Slowly add this dry mixture and gently combine until mostly smooth.
Once combined, remove the popover pan from the oven and grease LIBERALLY — the top as well as inside the cups. While the batter is still slightly warm or room temp (definitely not cool), fill each popover cup full. Top each popover with approximately 2 Tbsp of the grated Gruyere.
Bake at 350 degrees for 50 minutes, rotating pan half a turn after 15 minutes of baking. Remove from the oven, remove from the pan and serve immediately.
I don't see any reason why the Gruyere couldn't be optional. If you don't have any and/or don't want to break the bank to buy some, try the recipe without and let me know how it turns out.

Do you have any advice for somebody who doesn't use aerosol grease? I try to "keep it green" whenever possible, but DANG I wanna make some of these. Thanks in advance.

You could use mozz but since you use so little it's really about the flavor and mozz doesnt have a strong flavor. I would go with one of the cheese I mentioned or just none. If you dont have a pastry or basting brush you could use a paper towel just be very careful to not burn yourself! You could always hold the paper towel with tongs to be extra careful. No matter what option you use you HAVE TO TRY THESE!!

You'll Need:

2 eggs, beaten
1 cup granulated sugar
1 cup milk
1/4 teaspoon salt
2 tablespoons melted butter
1 teaspoon vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1/4 teaspoon nutmeg
1/4 cup cinnamon-sugar mixture

Procedures : Heat grease to 380 degrees F.

Combine ingredients in order given, except for cinnamon-sugar mixture. Drop by 1/2 teaspoon into hot fat. Fry until golden.

Place cinnamon-sugar in a small paper bag. Add doughnuts are they are fried, and shake gently to coat.

Yield: 4 dozen
