How to make Pakora (Onion Bhaji)

Usman & Salman's Pakora. (Onion Bhaji - vegetarian pakora)

Great tasting and simple recipe to make delicious pakoras. Great as a starter to any dinner party.


Ingredients for Pakora (Onion Bhaji)

200g Gram flour (Chickpea flour)
1 Large onion
3 Small potatoes
3 Chillies
Handful of fresh coriander

Spice mix:
1 teaspoon salt
1 teaspoon cumin (zeera)
1/2 teaspoon red chilli powder
1/2 teaspoon red chilli flakes
1 teaspoon coriander powder
Pinch of carom seeds (Ajwain)
Pinch of fenugreek dry leaves (Methi)

Feel free to increase/decrease individual spice quantity based on your taste buds :)

2 large potatoes, peeled and grated
2 large onions, cut in half then sliced
3 cups cornflour
3 tblspn curry powder
1/3 cup water
1 tspn turmeric
1 tspn salt
Pinch white pepper
1 tblspn fennel seeds (optional)

Spicy Tomato Dipping Sauce:
1 tblspn Worcestershire sauce
1 tblspn tabasco sauce
1 tspn cumin (optional)
1 cup tomato sauce

Procedures : Mix the grated potato and sliced onion together, add the other ingredients and mix well.

Deep fry a tablespoon of the mixture in vegetable oil at 180 degrees until crisp and golden brown.

Mix the dipping sauce ingredients together and serve with the bajis
