Описание:

Lynn demonstrates how to make a simple, delicious Vanilla Wafer Cake. This is a great dessert or afternoon treat. From thesouthernladycooks.

2 stick butter, (1 cup)
1-3/4 cup granulated sugar
6 eggs
½ cup evaporated milk
11 ounce box of vanilla wafers, crushed
1-1/2 cups coconut
1 teaspoon lemon extract
1 cup chopped nuts, your choice, (I used pecans)

Preheat oven to 350°.

Grease and flour a bundt pan or use a cooking spray that contains flour. Set aside.

Cream butter and sugar; add eggs and continue mixing. Add milk, vanilla wafers and coconut along with the lemon extract. Mix until well blended. Fold in nuts. Pour into prepared bundt pan. Bake in a preheated 350° oven for 1 hour to 1 hour and 10 minutes until center is done. Test with a toothpick that comes out clean or a cake tester. Cool for 15 to 20 minutes and remove from pan.

Serve with caramel sauce, if desired. Caramel Sauce Video - http://youtu.be/CCEXGjHkjUM

lynnsrecipes пишет: I do have a video for an apple cake. It is one of the first videos I made. If you go to my channel page and search for apple cake, it will pop up. I bet the caramel sauce that I uploaded on Tuesday, would be awesome sauce for the apple cake. I can't link the video here, but if you have any trouble finding it, let me know and I can send you a personal message with the link. I live in Georgia, so maybe it is a similar recipe. It came from my mother-in-law.

purplepuma123 пишет: Hi Lynn, this recipe looks really interesting. Are vanilla wafers just plain cookies. Or are they waffers? (sorry, I know that looks super confusing) In New Zealand (I come from NZ :) a waffer is a thin crunchy (ice cream) cone type cookie thng. But it looks like you bashed up a cookie. Hope that helps, as I'd really like to give this one a go.

brightpurpleviking пишет: I'm wondering if you know of a good, super-duper moist apple cake recipe? I was a guest at a woman's house in Georgia years ago and she made an apple cake that was incredibly moist and dense. I've never been able to find a recipe like it ~ and it's been nearly 20 years ago. She served it with a yellowish, sweet sauce. yum... my mouth still waters.

lynnsrecipes пишет: The vanilla wafers are more like a cookie. If you google Vanilla Wafer, you can probably see a picture of what it looks like. It isn't thin or like an ice cream cone. Nabisco and Keebler both make them, if that helps. It is a very plain, small cookie. Hope this helps.

You'll Need:

1 cup chopped pecans
1 (8 ounce) can coconut
14 ounces vanilla wafers
1 cup margarine
2 cups granulated sugar
6 eggs
1/2 cup milk

Procedures : Preheat the oven to 350 degrees F.

Chop pecans into small pieces. Pour into a bowl. Add the coconut. Crush the vanilla wafers in a blender and add them to the above and mix well. Cream the softened margarine and sugar. Add eggs, one at a time, to the margarine and sugar, beating well. Fold the dry ingredients into the egg mixture and add the milk. Pour the cake batter into a well-greased tube pan. Bake for one hour. Remove from tube pan when cool.

Slice and serve topped with whipped cream or vanilla ice cream
