That said "raw" almonds that do spout when you soak them are fine! Even when I have to pick up that kind at Trader's when I run out between farm trips- they do spout, taste awesome and are as close as I can get. Its not worth sweating the small stuff ;o)

What that looks like is using a little stevia to amplify the sweetness of say maple or dates without using as much of those higher glycemic options. It is a dietary compromise that allows me to have some of the flavor of the sweeteners I enjoy without having the ups & downs in blood sugar that are the root causes of things like inflammation.

Almond milk has MORE calcium that traditional milk and is not acidic- which can cause the leaching of calcium form bones to neutralize acids (look into the nations who consume the most cow's milk also having the highest osteoporosis rates!). Calculate calories by adding up the # of servings and dividing it by the sum of the calories in one cup of almonds and in your sweetener.

You'll Need:

4 ounces of sweet almonds
6 bitter almonds
Orange-flower water
1 quart of water

Procedures : To prepare this Almond Milk Recipe, first blanch the almonds, and grind them in a nut mill. Pound them in a mortar a little at a time, adding occasionally a drop of orange-flower water, to prevent oiling. When they are well pounded, return them to the mortar, and pour the cold water over them, mixing well. Place a cloth over the mortar, put a plate over that, and let them stand four hours. Strain and bottle for use
