Barbecue Beef Casserole

Texas BBQ Beef Ribs | Hilah's Texas Kitchen

Welcome to Hilah's Texas Kitchen - part travel show, part recipe show, 100% Texan. In this episode, we're visiting the 80-year-old Black's Barbecue in Lockhart - part of the famous Texas BBQ Belt - to watch a 4th generation BBQ pit master in action. Even if you never make it out to Black's we've got you covered with an amazing Texas BBQ beef rib recipe you can make at home.

OVEN-ROASTED BEEF BACK RIBS RECIPE

INGREDIENTS

- 2 Tbs coarsely ground black pepper
- 1 tsp salt
- 1 tsp smoked paprika
- 1/2 tsp dry mustard
- Uncut rack of beef ribs (approx. 3 lb)

DIRECTIONS:

- Make your rub by mixing all dry ingredients.
- Thoroughly cover the front and back of the beef ribs with the rub.
- Place in a roasting pan (with a rack if you have one), meat side up.
- Cover roasting pan with foil
- Bake ribs for 4 hours at 250F (121c) until tender.
- Remove foil and broil for an additional 3-5 minutes.
- Cut up the individual ribs, and enjoy!

You'll Need:

1 lb. ground beef
1/4 c. chopped green peppers
1/3 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
8 oz. can pork and beans
1 c. barbecue sauce
1 1/2 c. grated Cheddar cheese
1 sm. can Pillsbury biscuits

Procedures : Preheat oven to 375 degrees. In large skillet, brown ground beef with green peppers and onion. Remove from heat; drain. Stir in salt and pepper. Stir in beans, barbecue sauce and 1 cup of cheese.
Spoon ground beef mixture into around 9-inch casserole dish. Slice each biscuit in half, making 1/2 circles. Arrange biscuits around the outer edges of casserole dish on top of beef mixture, leaving center open.

Bake at 375 degrees for 12-15 minutes or until biscuits are golden brown.
Sprinkle 1/2 cup of remaining cheese onto casserole a few minutes before removing from the oven
