Barley Pudding

Pasta and Grains - Raspberry Barley Pudding








Описание:

Yields: 6 servings

Ingredients:
2 cups water
¼ tsp. salt
1 cup uncooked quick cooking barley
½ cup vanilla yogurt
¼ cup maple syrup
1 (12oz.) container whipped topping
½ cup walnuts, chopped and toasted
½ tsp. cinnamon
1 cup fresh or frozen raspberries



Preparation Directions:
~ In a saucepan, heat water and salt to boiling. Stir in barley; reduce heat and simmer 10 to 12 minutes or until tender. Cool completely.
~ In a medium bowl, mix yogurt and syrup; gently stir in whipped topping. Stir in barley, walnuts and cinnamon. Cover and refrigerate 2 hours.
~ Stir raspberries into pudding to serve.
~ Garnish with a sprinkle of cinnamon.

You'll Need:

2 cups barley, washed
5 cups water, boiling
1 cup milk, scalded
4 eggs
1 cup sugar
1 teaspoon lemon extract
salt

Procedures : To prepare this Barley Pudding Recipe, first boil the barley in the water with salt for about 40 minutes. Mix eggs, sugar and lemon extract together. Add gradually the milk and mix well. Mix milk and egg mixture with the barley. Pour into baking dish. Set baking dish in a pan of water. Bake in moderate oven for about 30 to 35 minutes
