Blackberry Cake and Caramel Frosting

This delicious buttermilk cake is great for second breakfast, elevensies, afternoon tea, dinner, supper... just about any time! Recipe below.

SECOND BREAKFAST BLACKBERRY CAKE

INGREDIENTS

CAKE:
• 1 1/2 cups flour, sifted
• 1/2 heaping teaspoons baking soda
• 1/8 teaspoons salt
• 6 tablespoons unsalted butter, at room temperature and cut into pieces
• 1/3 cups dark brown sugar, firmly packed
• 1 large egg, at room temperature
• 1/2 cups plus 1 tablespoon buttermilk at room temperature
• 1 cup blackberries

ICING:
• 1/3 cups dark brown sugar, firmly packed
• 3 tablespoons unsalted butter, at room temperature
• 2 1/2 tablespoons heavy cream
• 3/4 cups sifted powdered sugar
• 1/2 teaspoons vanilla extract
• 1/3 cups toasted, chopped pecans

INSTRUCTIONS

TIP

You might be tempted to add extra berries to the batter, but they add too much moisture and will throw off the balance of the cake. Also, when making the icing, make sure you stop combining the ingredients the moment the mixture becomes smooth. If it becomes grainy and sandy you have stirred too long and must start again.

CAKE
1. Position rack in middle of oven. Preheat oven to 350° F.
2. Coat an 8-inch square pan with nonstick spray.
3. Whisk together flour, baking soda and salt in a medium bowl to aerate and combine; set aside.
4. Beat butter with flat paddle on medium-high speed until creamy, about 1 minute. Add sugar and beat until light and fluffy, about 3 minutes, scraping down the bowl once or twice.
5. Beat in egg until well combined. Add the flour mixture in two additions, alternately with the buttermilk. Begin and end with the flour mixture and beat briefly until smooth.
6. Scrape batter evenly into pan and smooth top with offset spatula. It will be a fairly shallow layer. Scatter blackberries evenly on top, reserving about 5 of them; do not press into batter. They will sink during baking.
7. Bake for about 15 to 25 minutes or until a toothpick shows a few moist crumbs. The cake will just have begun to come away from the sides of the pan. Cool pan completely on rack.

ICING
1. Combine brown sugar, butter and cream in small saucepan and bring to a simmer over medium-high heat. Simmer for 1 minute, whisking frequently.
2. Remove from heat and whisk in vanilla and confectioners' sugar until smooth and fluid. It will firm up very quickly and if you whisk or cool it too long, it will become too firm and sugary.
3. Drizzle half of the icing with a spoon all over top of cake, then quickly sprinkle walnuts and reserved berries evenly over top while icing is still wet. Drizzle with remaining icing, which will set up almost immediately.
4. Store at room temperature well wrapped in plastic wrap up to 1 day.

I've had long hair all my life (I only trim it) and Fili has had long hair off and on. But she recently cut hers to donate and I am about to do the same! You'll Need:

1 cup butter flavored Crisco
2 cups granulated sugar
2 eggs
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon nutmeg
4 cups flour
1/2 teaspoon salt
1 cup sour milk (1 cup sweet milk plus 1 tablespoon vinegar)
1 teaspoon baking soda dissolved in half of milk
3/4 cup blackberries plus 1/4 cup juice
1/2 cup chopped nuts

Frosting
1 cup light brown sugar (firmly packed)
5 tablespoons canned milk (carnation)
1 tablespoon butter
1/2 teaspoon salt
1 teaspoon vanilla extract
2 2/3 cups confectioners' sugar, sifted

Procedures : Cake: Cream Crisco and sugar; add eggs and beat well. Add flour and spices (sifted together) alternately with milk. Fold in berries, juice, and nuts, gently.

Bake in a 10-inch tube pan for 1 hour and 10 minutes. Use cake tester. Bake a few more minutes if needed. Bake in a 350 degree F oven. Frost and dust with confectioners' sugar.

Easy Caramel Frosting: In saucepan, mix first four ingredients. Heat to boiling; stirring constantly. Remove from heat to cool. Stir in vanilla. Add confectioners' sugar about 3 tablespoonfuls at a time. Beat until smooth and creamy. Frost cake
