Jamaican Jerk Pork Chops with Mango Salsa Recipe

Ingredients
FOR PORK CHOPS
Marinated pork chops 1 Pound
Jamaican jerk rub 4 Tablespoon

FOR MANGO SALSA:
Chopped mangoes 2 Cup (32 tbs)
Halved cherry tomatoes 1 Cup (16 tbs)
Onion 1⁄2 , chopped
Red bell pepper 1⁄2 , chopped
Jalapeno 1 , seeded and chopped
Lemon juice 1 Tablespoon
Lime juice 1 Tablespoon
Salt 1 Teaspoon
Ground black pepper To Taste
Distilled white vinegar 1 Tablespoon
Olive oil 1 Tablespoon (Good quality)

Directions
GETTING READY

1. Soak pimiento wood in water. Wrap the wood in aluminium foil to make a bag. Poke some holes in the bag. Place the bag over the charcoal in the grill. Put island grill stone over the top.

2. Coat overnight marinated pork chops with Jamaican jerk rub all over.

3. Heat the grill up to 250 F.

MAKING

For Pork Chops

4. Place pork chops over island grill stone. Insert the probes all the way to the center. Let it cook.

5. Pull the probe out of the pork chops when the internal meat temperature has come upto 145 F.

6. Place the pork chops on the aluminium foil and arrange grill grades.

7. Put the pork chops on grill grades, let them get a good sear on both sides.

For Mango Salsa

8. Mix together mangoes, onion, jalapeno, red bell pepper, lemon juice, lime juice, salt and pepper, distilled white vinegar and olive oil to make mango salsa.

9. Garnish salsa with chopped cilantro and give it all a good mix. Set it aside.

SERVING

10. Place pork chops on a serving platter. Top with mango salsa and serve.

You'll Need:

3/4 cup water
1/3 cup lemon juice
1/3 cup chopped onion
1 tbsp packed brown sugar
1 tbsp chopped green onion
1 tbsp canola oil
3/4 tsp salt
3/4 tsp ground allspice
3/4 tsp ground cinnamon
3/4 tsp ground black pepper
1/2 tsp dried thyme, crushed
1/4 tsp ground cayenne pepper
6 lean pork chops, 1/2 inch thick

Procedures : Place the water, lemon juice, onion, brown sugar, green onions, oil, salt, allspice, cinnamon, ground black pepper and cayenne pepper into a blender and puree until smooth. Pour 1/2 cup in a small bowl, cover and refrigerate, to use for basting.
Place pork in shallow glass or plastic dish. Pour remaining marinade over pork. Cover and refrigerate at least 12 hours but no longer than 24 hours.
Heat coals or gas grill. Remove pork from marinade; discard marinade. Cover and grill pork 4 to 5 inches from medium heat. Turn chops frequently and brush with reserved marinade. Cook until medium done (160 degrees F/71 degrees C) and slightly pink when cut near bone, about 8 to 11 minutes
