Chicken Fiesta Salad

Fiesta Salad - Delicious!








Описание:

This salad is so easy to make. The flavors are fresh, bold and delicious. Our family loves it!

FIESTA SALAD
1 can whole kernel corn, drained
1 can 'seasoned' black bean, rinsed and drained (or 1 1/2 cups home cooked)
1/2 large bell pepper, finely diced
1/2 medium onion, finely diced
1 jalapeno pepper, seeded and finely diced
3 large cloves garlic, minced
1/4 cup cilantro, minced
1/4 teaspoon celery seed
salt and pepper to taste
1 teaspoon grated lime zest
juice of one lime
4 tablespoons extra virgin olive oil
1/2 cup cherry tomatoes - cut in half (optional)

Mix all ingredients together in a large bowl. Taste for seasonings. Add more lime juice or apple cider vinegar if more tartness is desired. If too tart, drizzle with a little honey to round out the flavor. Cover and refrigerate for several hours to let the flavors meld.

*Note - other vegetables could be added such as a grated carrot, sliced radishes or diced jicama.

You'll Need:

2 whole , Chicken Breast Halves skinless, boneless
1 1/2 ounces , Fajita Seasoning packet dry, divided
1 tablespoon(s) , Vegetable Oil
15 ounces , Black Beans can rinsed and drained
11 ounces , Mexican-style Corn
1/2 cup(s) , Salsa
10 ounces , Mixed Salad Greens
1 whole , Tomato cut into wedges
1 whole , Onion chopped

Procedures : Rub chicken evenly with 1/2 the fajita seasoning. Heat the oil in a skillet over medium heat, and cook the chicken 8 minutes on each side, or until juices run clear; set aside. In a large saucepan, mix beans, corn, salsa and other 1/2 of fajita seasoning. Heat over medium heat until warm. Prepare the salad by tossing the greens, onion and tomato. Top salad with chicken and dress with the bean and corn mixture
