Baked Potato Salad Recipe: How To Make Loaded Baked Potato Salad Recipe: Potato Casserole With Bacon, Cheese, Sour Cream! Twice Baked Potatoes Potato Salad! Recipes & Videos @ http://www.DishinWithDi.com Mom's best, baked potato salad is good cold, but great warm or hot! I make this recipe with bacon, cheese, green onion, and with sour cream, which makes it much like a loaded baked potato or twice baked potato. It's more of a potato casserole recipe, since the potatoes are cooked in the oven and served in a casserole dish and not boiled like German potato salad or old fashioned potato salad. Red potatoes are used, which eliminates peeling and baking potatoes give them a nice texture, adds flavor and prevents them from getting soggy. The flavor from roasting potatoes with the skins is also far better than boiling and the baby red bliss potatoes I use are a perfect match for this cheesy potato casserole. With green onions, bacon, melted cheese, sour cream (I use Breakstone), and the oven baked potatoes, this is one fine side dish! There's also some mayonnaise in this recipe, which makes the salad very creamy combined with the cheese and sour cream. (I use Hellman's mayonnaise) This recipe can be made a couple of days in advance, so it's really an easy side dish for parties, holidays or for barbecues. Side dish recipes that can feed a crowd, taste great and can be made ahead are always welcome in my home and simple ingredients mean an easy recipe! This will be served during the holidays (Christmas, Thanksgiving) and also for Father's Day, Memorial Day, 4th of July, Labor Day and Super Bowl Parties! This recipe has been husband and father-in-law tested and approved!! Goes especially well with steak, but I've served it for bbq with burgers, for dinner with beef, chicken, pork and turkey! You'll Need:

1 lb new potatoes
1/4 lb bacon
1/4 cup finely chopped shallots
1/4 cup red wine vinegar
2 tbsp olive oil
Salt and pepper to taste
1/4 cup chopped purple onion
1/2 cup chopped parsley

Procedures : Scrub potatoes and quarter them and drop into a kettle of cold salted water. Bring to a boil, and cook until tender but still firm about 8-10 minutes after water reaches boil.
In the bacon fat, saute chopped shallots until tender but not at all brown, about 5 minutes or so. Reserve shallots and fat.
When the potatoes are done, drain them and drop them into a mixing bowl.
Pour vinegar, olive oil, shallots, and reserved bacon fat over the still hot potatoes. Season with salt and pepper to taste, and gently toss. Add purple onion and parsley and toss again. Cool to room temperature, cover and refrigerate.
Before serving bring back to room temperature, toss, correct seasonings, and add additional oil and vinegar, if the salad seems dry. Sprinkle reserved bacon on top
