
Raw Vegan Coconut Banana Cream Pie

Pour over whole bananas, best if chilled first....just makes it set up faster, but not necessary.
Optional: top w/ macadamia coconut topping, chocolate sauce, (the 2 previous videos I made) and even to make it more like a banana split add sliced strawberries or blueberries, etc. Have fun making this your own.
This is super easy, flexible and versatile. I don't use the coconut water since it makes the pie taste more coconut flavored, but you can do what you want. Oh, and don't blend the ice in until the coconut meat and other goodies are mixed in first to make sure the oil doesn't clump up like mine did in the video. However, if you do no big deal since you'll just have to blend it longer. I find that the ice (versus water) makes the cream fluffier and ready to dig into faster.
2 C coconut meat (young thai)
½ C coconut oil (in the video I said olive oil....oops, that was wrong it is coconut oil)
¼ C agave
¼ tsp salt
½ tsp vanilla

You'll Need:
2 cups milk
1/2 cup granulated sugar
Pinch of salt
3 tablespoons cornstarch
4 egg yolks
1 teaspoon water
1/2 cup grated fresh coconut
1 tablespoon butter
1/2 teaspoon vanilla extract
1 (9-inch) baked pie shell
Procedures : Combine milk, sugar and salt in a double boiler and bring to a near boil. Blend cornstarch, egg yolks, water, and add to milk mixture. Add coconut. Cook over hot water until custard thickens. Add butter and vanilla extract. Cool. Top with meringue or whipped cream.
Meringue
4 egg whites
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/4 cup granulated sugar
1/2 cup grated fresh coconut
Beat egg whites with cream of tartar and salt until soft peaks are formed. Gradually add sugar, beating constantly. When meringue is fairly stiff, pile lightly onto filled pie. Be sure to seal edges. Sprinkle coconut on top. Bake at 400 degrees F for 10 minutes or until lightly browned
