Fresh Strawberry Bundt Cake - Easy Recipe

✔ Ingredients
1 cup margarine (2 sticks)
2 cups sugar
3 eggs
3 tbsp (divided)
zest of 1 lemon (1 tbsp)
2 ½ cups flour
½ tsp baking soda
8 oz sour cream
12 oz fresh strawberries (diced)
1 cup powdered sugar

✔ Directions
Preheat oven 325° F (175° C)
Spray bundt pan with non stick cooking spray
Mix butter and sugar until light and fluffy
Add eggs and lemon juice, mixing well
Add baking soda and sour cream, continue mixing
Stirring by hand, add the flour
Fold in the strawberries
Pour batter into bundt pan
Place it into preheated oven for 60 minutes or until toothpick inserted into center comes out clean
Allow to cool for 20 minutes in pan
Invert onto serving plate to cool completely
Mix remaining 2 tbsp lemon juice and powdered sugar to make glaze
Drizzle icing over cake

I also only had 2 cups of flour but added 1/2 cup buttermilk pancake mix. I'll let you know how it comes out and hopefully my co-worker and guests like it :)

You'll Need:

1 cup Softasilk or refined cake flour
1/4 teaspoon baking soda
1/4 teaspoon salt
6 eggs, separated
3/4 cup granulated sugar
1/2 teaspoon finely grated orange peel
1/4 cup fresh orange juice
1 tablespoon fresh lemon juice

Procedures : Grease a 10-inch tube pan or Bundt pan and set aside.

In a large mixing bowl, sift the 1 cup of flour. Add baking soda and salt. Sift four more times.

In a separate mixing bowl, beat the egg yolks until they are thick and the color of lemons. Add sugar and beat thoroughly. Add orange rind, orange juice and lemon juice, mix well.

Beat the egg whites until stiff. Fold in the egg yolk mixture. Add the flour, a little at a time. Mix thoroughly.

Pour batter into the prepared tube pan/Bundt pan. Bake at 350 degrees F for 45 minutes. Invert the cake pan and cool for 1 hour. Remove cake and add a little glaze to it by mixing 1 cup confectioners sugar and 2 tablespoons fresh orange juice. If mixture is too thick, add more orange juice until glaze is thin enough to drizzle over the cake
