Grilled Chipotle Corn with Cilantro Lime Butter
Prep Time: 15 minutes
Cook Time: 15
Total Time: 30 minutes
Servings: 6

Ingredients:
12 ears corn, shucked
1 1⁄2 teaspoons kosher salt
1 teaspoon chipotle powder

For the Butter:
1⁄2 cup unsalted butter, softened
1 lime zested and juiced
1⁄2 teaspoon salt
1⁄2 teaspoon finely ground black pepper
1⁄4 cup chopped fresh cilantro

Instructions:
Combine the butter, lime juice, lime zest, salt, pepper and cilantro in a medium bowl and mix well. Set aside.
Soak the corn in water for 10 minutes.
Remove corn from water and lightly pat dry. Sprinkle the corn with salt and chipotle powder
Prepare your grill for medium-high heat. Grill the corn for 10-15 minutes, turning occasionally until the corn is tender.
Remove from heat and serve the lime cilantro butter with the corn.

Tips:
Corn can be grilled with or without the husk. If grilling with the husk simply pull it back and remove the silks first. Then replace the husks and continue with the recipe. The grilling time will increase to 20-25
minutes.
You'll Need:

1 cup butter or margarine
1 tbs corn starch
1 tsp grated lime peel
2 tbs fresh lime juice
1/4 tsp ginger
2 tbs honey
1 large pineapple, cut into 6 slices, rind removed

Procedures : Heat grill. Melt butter (or margarine) in small saucepan over medium heat. In small bowl combine cornstarch, lime peel, lime juice, ginger, and honey. Add to butter in saucepan; mix well. Cook over medium heat until mixture begins to boil and thickens, stirring constantly. When ready to barbecue, place pineapple on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 10 minutes, turning once and brushing frequently with lime butter mixture
