Chilled Watermelon Soup Recipe:
8 oz Watermelon, cubed
8 ea Large strawberries, hulled and halved
1 ea Lemongrass stalk, outer layers removed -- cut in quarters
Cook all together on low heat. Simmer for 10 minutes and remove lemongrass.Puree and let cool. Strain and serve in chilled bowl.

2 cups watermelon
2 cups orange juice
1 tbsp frozen orange juice concentrate
orange peel ribbons or mint sprigs for garnish
Procedures : Combine watermelon, juice and concentrate in a food processor or blender and process until smooth. Chill mixture for at least an hour. Reblend briefly before serving.
Pour into chilled bowls and garnish with orange peel or mint sprigs, then serve as an appetizer or dessert
