tea4al пишет: Korean traditional sauces are: Garlic, brown sugar/honey/sweetener, soy sauce, sesame oil, black pepper. That's it. He's saying "koeran style" short ribs because of the specific cut. It's really popular in Korea and not so much anywhere else and it is a unique cut like he said which is why it's "korean". You can try the traditional marinades, or you can use your own. each korean family has their own version, so stop the hate. I'm going to ask my mom to use the pear next time, that was clever :)

LILbangerss пишет: " by the way, you know I like to play with my meat" nuff said lol

msdisguised пишет: im korean and what my mom does it after marinating she'll put it on a baking pan and bake it for 15 min on each side.. pretty juicy and tasty. but this recipe is off just by seeing that hoison sauce and sambal was added.. it shouldnt be added, but i guess it fits for the american taste buds..? but whatever, more too him

Byung Park пишет: Asian pear breaks down many types of animal and plant proteins for easier digestion. It has tenderizing effects on animal proteins specially. It not only adds sweet flavor but it also helps to provide food source for bacterias that make Koreans fermentation foods like Kimchees which is 1 of the worlds healthiest food. I don't know much about other usages of Asian pair but its one of the more popular ingredient used in traditional Korean food still used today. It also helps to resist cold virus.

Mason K пишет: They're Korean pears not Asian pears, chef John! and Korean pears are usually expensive. That's why they're usually protected in styrofoam nets.

Daniel Lee пишет: guys guys... Asian Pear, Korean Pear.... they are both wrong. the correct name of that pear is Singo Pear. you can buy it from Costco. the reason it is wrapped in fancy Styrofoam is that pear is freaking expensive like $5 each.

And also that flanken-style cut is not common in Korea actually. that is Korean-American style. Some people believe that is originated in Los Angeles.

In Vietnam all the apples are snuggled in a similar wrap.. they often turn the top back over the bottom side and it looks like all the soft fruits are wearing a happy scarf.. quite neat.

Menial пишет: @Level84 A, Korean recipe is not spicy at all. It is basically mix of soy sacue, Korean pear, green onions, onions, garlic and corn syrup. B, The completely grounded onion and marination in sweet sauce makes it so tender!

You'll Need:

4 pounds beef short ribs
1 medium onion, peeled and minced
4 cloves garlic, pressed
1/4 cup butter
1/4 cup red wine vinegar
1 cup catsup
1 cup water
1 tablespoon Worcestershire sauce
1 tablespoon brown sugar
1 tablespoon honey
2 tablespoons dry mustard powder
1 teaspoon chili powder

Procedures : Set ribs out of the refrigerator to warm to room temperature.

Preheat grill.

Meanwhile, make sauce. Saut onion and garlic in butter in a skillet until onion is clear, then add remaining ingredients and simmer 20 minutes, stirring from time to time. Dip ribs into hot barbecue sauce, then place on the grill. Feed fire small pieces of aromatic twigs fruit cuttings, grape or hickory. Cover and barbecue until ribs are done, about 1 1/2 hours, keeping fire low, turning from time to time and basting with reserved sauce. Douse any flame-ups.

Serve at once. Makes 8 servings
