Ballistic BBQ пишет: I suffer from the same disorder Mike! Cheers brother!!

Ballistic BBQ пишет: Thanks John. I was in Chicago in the mid-90's and yes, I got to go to Geno's. Great place!

Ballistic BBQ пишет: I'm the same way Tom. Chicago style really goes good on a cold night though!

Swoop1991 пишет: Starting to think if I remain subbed, I'll become morbidly obese!
No disrespect intended, that pie looked awesome!

SmokeyGoodness пишет: As many times as I've been to Chicago, I have to admit, I've never tried the deep dish pizzas. I always go to one of 4 rib joints. Next time, next time. In the meantime, I'll give this a whirl. I have just a garden variety pizza stone, though. I'm sure it'll work!
As Roger & Gene (also from Chicago) would say; "Two thumbs, way up"!

jennifer norman пишет: That looks amazing!!!!
When you visit us again PLEASE make this! I bet it's even good cold!

Ballistic BBQ пишет: Thank you brother!

Aaron Bruchis пишет: In a chicago style pizza they use the cheese to protect the bottom crust from getting soggy. the amount of sauce on a regular pizza is a thin layer, this uses a TON of sauce and "toppings" etc. Personally, i like a lot of cheese, so I've used cheese on both top and bottom of my pies..

Ballistic BBQ пишет: On another note, there is a gas station in the Sierra's where a gourmet chef is putting out some unbelievable food! HWY 395 at Tioga Pass. He hung up city life for fly fishing. A local secret that is a must stop for anyone passing through.

Ballistic BBQ пишет: Good eye! I had three olives float'n in a jar that I decided to cut up and toss in. I didn't even think that they would show up!

Ballistic BBQ пишет: Thank you Rondel!

Scorpion11381 пишет: I hope Chicago hasn't boycotted your pizza, lol. Still looks damn good as far as I am concerned. My only critique, smoosh that sausage into one even layer.

Mark Taylor пишет: Greg, I'm a N.Y guy so I'm kinda biased but that looks great. I'm gonna try this one.

Ballistic BBQ пишет: Thank you!

crungen5 пишет: fricking awesome man!!!!

Ballistic BBQ пишет: It's a very tasty dough. Perfect for a deep dish!

Ballistic BBQ пишет: Yes! It will work great in the oven. Pretty much all of my pizza recipes are meant for the oven and I've adapted them for the outdoor cook. 475º oven for about 30 minutes or so. You're looking for bubbling cheese and golden brown crust.

skad839 пишет: Watching this is an awful way to start day. Nothing I eat will compare to that work of art!

Ballistic BBQ пишет: Thank you. Yeah, I've been cooking my pizzas on super high temps and I've had two standard stones break on my. I just had a piece of 3/16" steel cut into a circle. Gonna season it and use it for my pizzas on the grill.

Ballistic BBQ пишет: I've seen the smooshed sausage technique on TV. I'll give it a try!

Haida Diablo пишет: where is the recipe for the pizza dough you said was posted below ???

BolognaRingRanch пишет: Now that's what I'm talking about! I'm headed your way for some of that! Good one, Greg.

neurocosm пишет: I remember talking to an Uno's general manager (Uno's is an East Coast Chicago pizza type place), I asked about the recipe why why it seemed so biscuit-like. I asked what fat was used in the dough for some foolish reasons like "health" or something. He said exclusively, they use Soybean oil IN the crust, and they also put some in the pan before they press the dough in! I went home, made up a batch of their dough (got that too!... and it was PERFECT. Thanks for the vid.. gonna make some soon!

Ballistic BBQ пишет: Yeah man! Gotta' make your own if you can't find it in town!!! Thanks for watching!
