Nutty Pork with Spicy Dipping Sauce

This is my version of a very popular Cambodian dipping sauce called Prahok Kitss. Its slightly sweet, salty, and spicy flavor will have you coming back for more! You eat it with an assortment of vegetables and a side of white rice...yum!!

You'll Need:

1 pound pork tenderloin, cut into 1-inch cubes
4 tablespoons peanut butter
2 tablespoons soy sauce
2 tablespoons ground coriander
2 teaspoons ground cumin
1 clove garlic, minced
1/2 teaspoon chili powder
1 tablespoon lemon juice
1 tablespoon vegetable oil

Procedures : Blend together peanut butter, soy sauce, coriander, cumin, garlic, chili powder, lemon juice and vegetable oil. Rub paste into pork cubes. Cover, let marinate at least 30 minutes. If marinating longer than 30 minutes, refrigerate.

Thread cubes onto 4 to 6 skewers (if using bamboo, soak for 20 to 30 minute first). Grill over hot coals, or broil, about six inches from heat, for 10 to 12 minutes, turning once. Serve with Spicy Dipping Sauce.

Spicy Dipping Sauce
4 tablespoons soy sauce
4 tablespoons rice vinegar or white vinegar
2 tablespoons water
1 tablespoon molasses
1 teaspoon crushed red pepper
1 clove garlic, minced

Combine and allow to stand for 1 hour
