
Cooking with Soy - Soy Orange Pork Chops, Garlic Mashed Potatoes, & Tofu Ranch Dressing

Welcome to "Cooking with Soy," I am Judy Gillard or otherwise known as Chef Judy from the Judy a la Carte show. We are in the kitchen classroom at the mid-town Hy-Vee along with Jane Reeson from the Nebraska Pork Producers. Today we are going to prepare a simple, traditional meal using some different soyfood ingredients to increase the nutritional content of old family favorites. We will show you simple ways to incorporate soy into your diet.

Thanks, Judy -- I am excited to make this for you today, because this recipe incorporates Nebraska Pork with a tasty soy marinade over delicious chops. This can be cooked indoors like we will do today, or outside on your grill for a great outdoors meal.
This recipe is called Pork Chops with soy-orange sauce. First we are going to combine our fresh ¾ cup of orange juice with 2 tablespoons of soy sauce. Judy can add: Soy sauce is made from soybeans that are mixed with roasted grain, usually wheat, rice or barley, and then fermented for several months.
We will also add one tsp of sugar, some garlic, pepper and fresh thyme. Stir this together. This is our marinade we will set it aside, while we get our Pork Chops ready.
With a very sharp knife, score the pork chops 1/8 inch deep in a crisscross pattern on each side. This will help the chops soak up the flavor from the soy-orange sauce. Place in a glass or stainless steel dish in a single layer. Pour the marinade over the chops and let sit for at least 30 minutes.
While we wait for the meat to soak up the delicious marinade, let's get our garlic mashed potatoes ready. Today I am using 2 ½ pounds of Russet potatoes. I have already washed them carefully. By leaving the skins on the potatoes, you increase the fiber. We will also add some garlic to the water with the potatoes. Be sure to add your potatoes to cold water, then bring them to a boil, reduce to a simmer and then cook until the potatoes are tender.
I happen to have some ready for our next step. Once your potatoes are cooked through, you will drain, and mash them with a hand masher or an electric mixer. To help make them creamy and delicious we will add 4 tablespoons of Tofutti cream cheese. (Show package.) Mashed potatoes with cream cheese are always delicious, but this recipe is delicious and nutritious. The Tofutti cream cheese is soyfood substitute for cream cheese. It has the same texture, and flavor, but less fat, and no cholesterol. We will add some salt and pepper, mix in 2 tablespoons of butter or margarine. Tofutti cream cheese can be found in the Hy-Vee Health Markets, look for it, and try it in your favorite recipes that call for cream cheese.
That looks great -- let's get these pork chops on the grill. Today we will use an indoor grill, but this recipe can be used in a skillet with soy oil or on an outdoor grill.
Our pork chops have soaked up Soy-orange sauce and ready to go on the grill. We will place these on the grill for about 3 minutes on each side, if you were cooking them in a skillet. While those are sizzling, we will reduce the left over marinade on the stove, to pour over our chops before serving. This soy-orange sauce smells so good.
Thanks Jane, that looks and smells delicious. We can make a ranch dressing or our side salad, using silken tofu. This is another way to add soyfoods to old favorites. This is so simple, you just use one 12 oz package of firm silken tofu, ¼ teaspoon of salt, one small package of Ranch salad dressing mix, and 1 tablespoon of lemon juice. We will put all of this in our blender, and mix. This recipe can be used as a salad dressing or as a dip. Per serving, it is only 57 calories, 3 g fat, and 0 g of Saturated fat. It includes 2.4 grams of soy protein. No sour cream -- much healthier and you won't even miss the sour cream. Tofu takes on the flavor what it is mixed with, so in this case the Ranch mix is contributing the flavor.
I believe we are ready to put this meal on a plate. You can pour some of the marinade over the pork chop on the plate, we will add the garlic mashed potatoes and our side salad is ready with Judy's Ranch dressing.

You'll Need:
1/4 cup butter or margarine
2 cups finely chopped onion
3 lbs baking potatoes
1/2 cup sour cream
3/4 cup orange juice
1 tsp salt
Orange zest for garnish
Procedures : Melt butter in large skillet over medium-high heat; add onion and cook, stirring constantly, until browned. Set aside. Peel potatoes; cut into fourths. Cook potatoes in boiling water to cover 15 minutes or until potato is tender; drain. Beat potato, sour cream, and orange juice at medium speed with an electric mixer until mixture is fluffy. Stir in onion and salt. Garnish, if desired
