Ingredients- Makes 3-4 Servings
1/2 package Spaghetti
4 Table Spoons Pesto
2 Chicken Thighs- Chopped into small cubes
1/2 Medium Onion- Chopped
Olive Oil
Parmesan Cheese
1. Start Boiling water for pasta (high heat)
2. Heat your frying pan on Medium low heat. Once hot, pour some olive oil in and let that heat up.
3. Throw your chicken cubes into the frying pan. Brown on all sides for 2-3 minutes.
4. Once chicken is brown, toss the onions in and continue cooking untill chicken is cooked through (about 2-3 minutes more). Once done, turn off heat and set aside.
5. Once water is at a rolling boil, toss your pasta in. Follow directions of your pasta box.
6. In another large bowl, put half your pesto and half your chicken into the bottom.
7. Once pasta is done, drain and toss into the bowl with the pesto in it. IMPORTANT remember to set aside a little pasta water.
8. Once pasta is in the bowl, throw the rest of the pesto and chicken on top, put about 1/2 cup of pasta water in and mix thouroughly.
9. Once its mixed up, plate into your bowl and add more parmesan and olive oil if you would like.

Preparation - 10 minutes, cooking time - 15 minutes
11 oz spaghetti or fettuccine
grated rind and juice of 1 lemon
small bunch of fresh flat-leaf parsley
1 tbsp capers
1/2 cup small, sweet black olives
a pinch of crushed chili flakes
4 tbsp olive oil
1 large garlic clove
salt and ground black pepper
Parmesan cheese, to serve
Procedures : Cook the pasta in a large pan of boiling, salted water.
Meanwhile, put the rind and juice from the lemon into a large serving bowl. Roughly chop the parsley and capers and add to the bowl with the olive, chiliflakes, and oil. Crush in the garlic and season well.
Drain the pasta well and add to the bowl, tossing to mix. Shave or grate some Parmesan on top and serve out at the table, remember to set out an extra side bowl for the olive pits
