A favorite summer dish on all sides of the Mediterranean and Asia Minor, zucchini fritters come with many different names, because they are made and enjoyed in so many different countries.
The ingredients for the basic recipe are:
5-6 zucchini - shredded and strained ( Also use pumpkin when in season)
1 large onion - diced thin
3-4 cloves of garlic- chopped-mashed
2 eggs
1/2 cup parsley (optional : dill, mint, green onions)
4 Tbs olive oil (and more for frying them)
1-2 cups of flour
salt and pepper
1 cup Parmesan cheese ( or Feta, Romano, goat cheese, or a mix)
Served with a variety of sauces (tzatziki, horseradish, spicy tomato sauce are popular) or without.

You'll Need:
# 1 large pumpkin or squash
# 1-2 onions, finely chopped
# mint, finely chopped
# toasted breadcrumbs
# salt and pepper
# flour for coating
# oil for frying
Procedures : # Slice the pumpkin, or squash, grain it and let it drain well
# Place the drained pumpkin in a bowl together with the chopped onions, mint, salt and pepper and mix well
# If the mixture is watery add the toasted bread crumbs
# Heat the oil in a frying pan
# Coat spoonfuls of the pumpkin mixture in flour and fry on each side, turning them once until they become a golden brown colour
# Drain and serv
