
YCMT-Portobello Mushroom, Spinach and Roasted Pepper Sandwich

You Can Make This-Portobello Mushroom, Spinach and Roasted Red Pepper Sandwich
Ingredients
2 whole wheat buns (or your favorite bun)
2 large portobello mushrooms
2 red peppers
1 tomato
1 red onion
1 cucumber
4 tbsp hummus (Your choice of flavor, I usually use roasted red pepper)
fresh spinach leaves
Preparation
Put oven on broil, place peppers on 2-3 inches from heating element.
Turn peppers every couple of minutes until black and charred on the outside
Remove from oven and let cool
When cool, peel off blackened skin, cut in half, remove innards and slice in half
Turn over to 400 degrees.
Lightly oil a nonstick pan with olive oil and place portobello mushrooms on it, top up.
Lightly drizzle balsamic vinegar and olive oil on mushroom
Roast for 15 minutes, turn over, apply more vinegar and oil, and roast for another 15 minutes, take out and let cool
While that is roasting slice the tomato, onion, and cucumbers in very thin slices
Build Sandwich
Coat each bun, top and bottom, with one tbsp of hummus
Place some spinach leaves on hummus (should stick to it)
Place cucumbers and tomato on spinach
Put whole mushroom on next
Place roasted red pepper on mushroom
Top with red onion slices
Close sandwich with top half of bun (that should have hummus and some spinach on too)
This is a "VERY MESSY" sandwich, but it is a "fun" messy... enjoy :-)

I can just imagine the crunch from the veggies and the sweetness from the tomato and roasted peppers..omg lol. When I am on a slump, I will absolutely have to make this, it would make me so happy lol.

You'll Need:
2 tbsp butter
1/2 pound mushrooms, cleaned, stemmed, and chopped fine
2 tbsp flour
Pinch of curry powder
1/2 cup milk or half-and-half
Salt and ground pepper
16 thin slices dense white bread, crusts removed
Melted butter
Procedures : Melt the 2 tbsp butter in a saute pan, add the mushrooms and cook rapidly over moderately high heat, stirring, until lightly browned, about 3 minutes.
Sprinkle with the flour and curry powder and continue to cook, stirring, for about 2 more minutes, add the milk and cook, stirring, until the mixture is very thick.
Season to taste with salt and pepper. Spread the filling generously on one slice of bread, top with another slice, and cut in half so that you have an oblong or finger sandwich.
Brush each side with melted butter. Place on a cookie sheet, turn on oven to broil. Place the rack about 5 inches from the broiler.
Broil, watching constantly, as sandwiches will brown rapidly, when one side is golden, turn with a pancake turner and toast the other side.
Serve immediately
