How to make Tomato Basil Crostini
Ingredients
32 slices of (1/4 inch) baguette
extra virgin olive oil
salt, to taste
1 head of garlic, roasted (optional)
3 tomatoes, chopped
6 basil leaves, thinly sliced
2 tbsp of shredded parmesan cheese
Instructions
1. Preheat the oven to 400 F.
2. Cut the baguette into 1/3 inch slices and place on a baking sheet. Drizzle the bread with extra virgin olive oil and season with salt. For extra flavor, rub the slices with roasted garlic.
3. Toast for about 15 minutes or until golden in the oven.
4. Layer each piece of toast with tomato, basil and shredded Parmesan cheese and drizzle with more extra virgin olive oil. Serve immediately.

4 plum tomatoes, seeded and chopped
12 to 16 slices French bread (baguette type)
1 large clove garlic, peeled
2 tablespoons olive oil
1/4 cup chopped fresh basil
Zest of 1 lemon
Salt and freshly-ground pepper, to taste
Procedures : Allow the tomatoes to drain in a colander for 30 minutes.
Toast the slices of bread and rub each with garlic. Combine the tomatoes with the remaining ingredients in a small bowl and divide between the slices of toast. Serve immediately.
