Honeyville Meals in a Jar (Baked Ziti Casserole) With Chef Tess

Chef Tess Bakeresse shows you how to make Baked Ziti with Honeyville freeze dried foods and how to prepare and store meals in a jar.

Chef Tess Bakeresse Saucy "Baked Ziti" Italian Skillet Casserole with Sausage and Mushrooms

In a quart jar:
2/3 cup Honeyville tomato powder
1/3 cup Honeyville Freeze Dried onion
1T Chef Tess Italian Seasoning
1/3 cup Honeyville freeze dried sausage
2/3 cup Honeyville Freeze dried Ground Beef
1 cup Honeyville Elbow Macaroni(3 ounces)
1/3 cup Honeyville freeze dried mushrooms
2/3 cup Honeyville freeze dried Mozzarella cheese (in a snack baggie)

For long-term storage, always top jar with a 300cc oxygen absorber and tighten the lid, being sure the absorber isn't over-lapping the rim.

To prepare: Place contents of jar (except for cheese) in a covered skillet or pot with 5 ½ cups water. Simmer 15-20 minutes until pasta is tender and sauce is thick. (Solar oven 30-40 minutes covered). Place contents of cheese bag in a bowl and spray lightly with water. Sit for 5 minutes. Uncover cooked pasta mixture. Top with cheese. Cover again and allow cheese to melt, about 5 minutes. Serve hot.

The shelf life could be a lot shorter than regular pasta, so I would suggest researching whole wheat pasta and finding out what it's storage life is.

Another idea would be to use the freeze dried foods with regular food you already use, freeze dried Mac & Cheese, a good veggie soup recipe using freeze dried ingredients. I really appreciate the fact that these can be used for long term food storage, or just when you need a quick meal with no time to prepare from scratch.

You'll Need:

8 oz. ziti pasta
8 oz. regular or spicy bulk pork sausage
1 small onion, chopped ( 1/2 c.)
1 tbsp. chopped parsley
1 cup sliced fresh mushrooms or 4-ounce can sliced mushrooms, drained
1/4 cup chopped sun-dried tomatoes in oil, drained
1 cup plain low-fat yogurt
1/4 cup grated Parmesan cheese, optional

Procedures : Cook pasta according to package directions, drain. Rinse with hot water, drain and set aside.
Saute sausage and onion in a large skillet, breaking meat into small pieces with back of fork. Cook until sausage is almost done, drain fat. Add parsley and mushrooms. Cook 2 to 3 minutes.
Stir in drained cooked pasta, dried tomatoes and yogurt. Heat but do not boil.
Sprinkle with Parmesan cheese, if using
