Dry Rubbed Roasted Chicken with Peanut Satay Sauce and Steamed Vegetables.
Caution: This dish contains nuts!
Asian style, Indonesian influenced dish with Coffee and Satay sauce for deep rich flavors. This dish can be made without the chicken, replacing any bbq meat, shrimp or fish for the chicken. It can even be made vegetarian(note the fish sauce) by using tofu or simply ignoring the meat section and only serving vegetables noodles and sauce. Alternatively one can just make the chicken to top a salad. The possibilities are endless. As noted the only fat in this dish comes from the peanuts and there are not many of them.
First rub:
Coffee, Cayenne Pepper, Garlic
Second rub:
Coriander, Cumin, Black Pepper, and Garlic
Steamed Veggies:
Baby Bokchoy and Mung Beans
Really anything you like: mushrooms, leafy greens, broccoli to name just a few
Staple:
Rice, Rice Noodles, Vermicelli noodles
Satay Sauce:
Peanut Butter 1 heaping table spoon
Peanuts, Crushed 1/4 cup
Green Onions 2, chopped ultra fine
Red Chili's, 3 medium sized, deseeded chopped ultra fine
Lime Juice, equivalent to 3-5 normal sized limes
Thai Fish Sauce, 3-5 table spoons
Cilantro, small handful ~ 50g
Crushed Garlic, 3-4 cloves
Salt, to taste, will require more if you add less fish sauce
water, 2-4 tablespoons to get the consistency right. Should look like very chunky Ketchup or a relish.
Sugar(optional), I add on the table

1 med Pepper, any colour
1 lrg Carrot
2 1/2 x Florets cauliflower
1 x Chunky onion or shallots
1 tsp Garlic powder
1/4 tsp Turmeric powder
1 1/2 tsp Salt
1 tsp Sugar
2 tbl Oil
PEANUT SAUCE
146 gm Peanuts, roasted and blended
1/4 tsp Cumin powder
1/4 tsp Coriander powder
1/2 tsp Chilli powder
1 1/2 tbl Water
3 tbl Sugar
1/2 tsp Salt
Procedures : * Peanut sauce: Add all the spices and peanuts, water, salt and sugar.
* Keep stirring into a thick and tasty sauce.
* Clean and rinse the vegetables and cut into bite sized pieces. Mix vegetables with garlic, turmeric, salt, sugar and oil. Skewer the vegetables and barbecue, dip into sauce and serve
