Bloody Mary Bites

Bites and Booze - Rum and Carrot Bloody Mary

Well, your mom always told you to eat more veggies. Too bad she didn't tell you not to do it with alcohol! This week, we make mama proud and have a big ol' serving of fruit and vegetables with our variation of a variation of a Bloody Mary.
This tasty drink is perfect for those of you who don't like tomato juice or vodka (but I mean, c'mon, who doesn't like vodka??) by switching them with rum and carrot juice! Now, I am not a fan of rum, but this drink is just good enough that I'll have one... or two... or six at brunch!

What you will need:
¼ cup carrot juice
1/8 cup Rum
1 Tablespoon Lime juice
1/8 cup Pineapple juice
¼ cup sweetened condensed milk
¼ cup ice

What you will do:
Put it all in a shaker and shake it up!

See? Now that wasn't too hard, was it?? And you don't even have to feel guilty about it because you are drinking carrot juice! Carrots are good for your eyes, and rum is great for the soul. So there is no way this drink can not be a good thing!

You'll Need:

1 pint cherry tomatoes
Vodka (to cover)*
Coarse kosher salt (can also use regular salt)

Procedures : The day before, peel the tomatoes by dipping in boiling water for 10 seconds then plunging into ice water. The skins will easily slip off. Place peeled tomatoes in a plastic container with a tight lid. Cover with vodka and refrigerate overnight.

Serve with a small dish of salt for dipping. (Save the leftover vodka as it is flavored with tomatoes and tastes great.) Try using hot pepper vodka for a spicy variation!
