The Art Of Cooking пишет: No, it just regular soy sauce. I use Kikkoman brand. You might have a different brand than what I use. Dark soy sauce tend to be sweeter and light soy sauce is saltier. Hope that helps.

The Art Of Cooking пишет: Yes, you can use breast or chicken tenders. The only reason I'm using thighs is because of the fat content that thighs have.

The Art Of Cooking пишет: You can use any brand of Bourbon Whiskey you like, but I prefer Jack Daniel's, Kentucky Bourbon and/or Jim Bean's. Out of all of them, I think Jack Daniel's taste the best, that's just personal preference.

The Art Of Cooking пишет: Yes, you can use sweet wine and as for hoisin sauce, the best substitute is sweet bean paste or soy bean paste. Please do note that any substitute will alter the taste of the intended "taste" as not every substitute is a perfect substitute. You should get similar results though.

Each spice is said to satisfy your taste bud: sweet, sour, bitter, salty and umami. 5 spice usually contains these spices: Aniseed, fennel seed, cassia, orange peel and wild pepper.
