Broiled Mochi with Nori Seaweed

California Roll Burger Food Deconstructed

California Roll Burger
crab and shrimp patty, pickled cucumber and avocado salad, nori rice crackers & shoyu-wasabi mayo, on sweet roll

Pickled cucumber/avocado salad

ingredients
1/4 cup rice vinegar
4 teaspoons sugar
1 teaspoon soy sauce
1 teaspoon fish sauce -- talk a little about fish sauce. It's a weird one.
1/2 teaspoon dried crushed red pepper
2 small English hothouse cucumbers, diced
1 avocado, diced

procedure
◦ mix all the wet stuff in the bottom of the bowl with the whisk
◦ add seasoning and whisk well
◦ add cucumbers and avocado, toss in dressing
◦ set aside for "1-3 days"


Shoyu wasabi mayonnaise

ingredients
½ cup mayonnaise (ideally Japanese style)
1 clove garlic, minced
1 teaspoon wasabi paste
1 tablespoon soy sauce

procedure
◦ put all ingredients in a bowl
◦ whisk to combine


Crab and shrimp patty

ingredients
1 cup raw shrimp, cleaned, peeled and chopped
1 cup fresh crab meat
1 tablespoon sweet rice vinegar
1 tablespoon soy sauce
1/2 teaspoon sriracha
1 teaspoon spicy mustard powder
2 tablespoons mayonnaise
1/4 cup green onion, chopped
2 tablespoons fresh cilantro, chopped
1/8 teaspoon white pepper
1 teaspoon kosher salt
1/3 cup panko crumbs
1 egg, lightly whisked
2 tablespoons sesame oil

procedure
◦ preheat oven to 350
◦ pulse shrimp, crab, vinegar, soy, sriracha, mustard powder, green onion, and cilantro in the food processor until smoother but not a paste (small pieces)
◦ add mayo, salt, pepper, panko, egg, and sesame oil and pulse until just combined (some streaking is fine)
◦ shape into burger sized patties and chill
◦ bake at 350 for 10-15 minutes
◦ keep warm in low oven until serving


Plating

additional ingredients
Hawaiian sweet roll or other delicious, sweet burger roll
little Japanese style seaweed rice crackers
Burger patty
Mayonnaise
pickles

procedure
◦ Slice bun in half
◦ Spread wasabi aioli on both halves of bun
◦ put single layer of rice crackers on bottom bun
◦ Put burger patty on top of rice crackers
◦ top with pickles
◦ top with bun

You'll Need:

8 frozen mochi squares
1/2 cup soy sauce
1 sheet nori (dry seaweed)

Procedures : Preheat oven to 450 degrees F (275 degrees C).
Dip mochi into soy sauce, then place on a baking sheet. Let bake for about 5 minutes, or until heated through.
While mochi is cooking, cut the dried seaweed into 8 strips. Place these strips in a large frying pan over medium heat. When they are warmed, after approximately 1 to 2 minutes, remove them from the heat.
Wrap each mochi cake in seaweed; serve warm
