
Chinese Melon Soup (Authentic Chinese Recipe)

This Chinese melon soup is delicious and easy to make. Very healthy. Made with pork, dried shrimp and duck egg, it's a real treat. This is an authentic Cantonese recipe. Enjoy! The recipe is below:
Chinese Melon Soup: Authentic Cantonese recipe
1 lb. sliced Chinese melon (known as hairy melon or mo gua)
4 oz. sliced pork
2 pieces sliced ginger
2 tablespoons dried shrimp
1 duck egg (optional)
5 cups water
1/4 to 1 teaspoon salt
1/4 teaspoon sesame oil
In a pot, put 5 cups water. Add pork, ginger and dried shrimp. Bring to a boil. Add sliced melons. Cover with a lid and boil soup at medium heat for 20 minutes. Crack open duck egg and put into soup stock. Add salt and sesame oil. Cover and boil soup stock at low heat for ,last 10 minutes. Enjoy

It's sort of like a Cantonese casserole dish, I think. I think it's what people would refer to as peasant's food because it's so simple. But I looooved eating it as a child.

You'll Need:
For relish:
1 ripe papaya, peeled and cut into 1/2-inch dice
1/2 cup fresh blueberries
1 tbsp fresh lemon juice
2 tbsp fresh mint chiffonade
For soup:
1 lrg ripe cantaloupe, peeled and coarsely chopped
2 tbsp fresh lime juice
1 tbsp honey
Procedures : Relish:
Combine the papaya, blueberries, lemon juice, and mint in a medium bowl.
Let sit at room temperature for 1 hour.
Soup:
Place the cantaloupe, lime juice, and honey in a blender and blend until smooth.
Ladle the soup into bowls, add a splash of seltzer, and top with the relish
