Making cheese quesadillas is so easy to do but I like just a bit more flavor than just plain cheese so I add a bit of minced onion and mild green chiles. This makes the appetizer just a bit more interesting in flavor.
Of course you must top it with homemade guacamole. You can watch that video here. It's delish:

To make your quessadilla taste amazing, be sure and cook it in butter. Yes the real stuff. It makes all the difference in the world, trust me on this. Or go ahead and experiment but do try it with butter to compare.
This is such a great snack for the kids after school or even an evening with the ladies served with a bit of sangria perhaps? I have a video for that too. Check it out and plan ahead because sangria has to be made a day in advance. But it sure compliments cheese quesadillas. Here is a link for the sangria:

Quesadillas can be made a million different ways meaning you can put just about any ingredient you can imagine. It's like a Mexican pizza where the sky's the limit!
Try different cheeses, brie, monterey jack, goat cheese... you name it. Try them all!

You can add any kind of meat, chicken, bacon, beef, even fish. I could go on and on.

You'll Need:
1 cup Cheddar cheese, shredded
1 cup Colby cheese, shredded
1 teaspoon ground red chiles
1 bunch cilantro stems, cut into 1/2-inch pieces
Paprika
Procedures : Place all ingredients except cilantro and paprika in a food processor fitted with the steel blade. Cover and process until smooth, about 1 minute. Roll mixture by teaspoonsful into chile shapes. Insert cilantro pieces in wide ends of shapes for stems. Sprinkle with paprika until completely coated. Cover and refrigerate until serving time.
Serve on crackers
