Chicken and Mesclun Salad with Raspberry-Walnut Vinaigrette

This cranberry vinaigrette over a spring mix salad should be called the kitchen sink. It has candied walnuts, feta cheese, carrots, avocado, chicken, celery, tomato, bell pepper, raspberries, pear and more. It's so healthy and delicious!

This beautiful salad is not only delicious, it's healthy too. You just gotta try it. This is a complete meal!

Cranberry vinaigrette
Ingredients:
1/4 cup fresh or frozen cranberries
1/2 cup water
1/3 cup olive oil
2 Tbsp plus 1 tsp. balsamic vinegar
2 - 3 leaves of fresh basil
1/4 tsp. garlic powder
pinch of salt and pepper
1 tsp. sugar
2 Tbsp. water to thin the dressing out.

Directions:
Place the cranberries, 1/2 cup of water and sugar to a sauce pan and heat over medium heat. Stir and cook until the cranberries pop, and break down. Once the sauce thickens a bit after about 3 to 4 minutes, remove from heat and let it completely cool.

Place the olive oil, vinegar, garlic powder, pinch of salt and pepper, basil, cranberries, add a couple of tablespoons of water. Blend until smooth.

Now let's put the salad together. You can use any ingredients you like but here's what I used:

feta cheese
diced red bell pepper
organic raspberries
shredded carrots
diced celery
1 pear, peeled and cut into chunks
left over, cooked chicken cut into bite size pieces
diced tomato
cubed avocado
spring mix lettuce

Mix all ingredients into a big bowl. Add the avocado, walnuts and raspberries and feta cheese at the end. Toss well and enjoy!

You'll Need:

4 boneless, skinless chicken breast halves (about 1-1/4 pounds)
1 to 2 tbsp olive oil
1 tbsp tri-colored peppercorns, crushed
1/3 cup walnut oil
2 tbsp raspberry vinegar
2 tsp maple syrup
1/4 tsp salt
1/4 tsp pepper
6 cups mesclun (mixed spring greens), rinsed and dried
Salt
1 cup fresh raspberries
1/4 cup coarsely chopped pecans, toasted

Procedures : Rinse chicken and pat dry. Brush chicken lightly with olive oil; press peppercorns evenly onto both sides of chicken.
Place chicken in centre of cooking grate; sear 3 to 4 minutes, turning once halfway through searing time. Continue grilling chicken 7 to 8 minutes or until chicken is no longer pink in centre and juices run clear, turning once halfway through grilling time.
Meanwhile, prepare vinaigrette by whisking together walnut oil, raspberry vinegar, maple syrup, salt, and pepper. Set aside.
Divide greens among 4 individual plates. Season chicken with additional salt to taste. Carve into thin slices and arrange on greens. Top with raspberries and pecans. Drizzle with vinaigrette
