With the crisp outer breading sealing all the natural juices of the chicken in, there are no dry pieces and all pieces are uniformly done. 1 1/2 cups Parmesan cheese
1/2 cup coconut flour (omit on Induction)
3 tsp onion powder
1 tsp garlic powder
1 tsp black pepper
1 tsp baking powder
Egg Bath
1 egg
1/2 cup cream
1/2 cup water

A really wonderful tasting baked chicken. This is a recipe that I received from my friend, Lauren. It tastes great with honey mustard or ketchup for a dipping sauce. It can be made with boneless, skinless chicken breasts or chicken nuggets, too. It is also a really easy recipe to double and make for a crowd.
Pecan Crusted Chicken Tenderloins
1 pound of chicken tenderloins
1 cup buttermilk
2 eggs
1 Tablespoon lemon juice
1 clove garlic, minced
teaspoon salt
teaspoon cayenne pepper
1 cup Italian bread crumbs
cup chopped pecans
teaspoon black pepper
teaspoon salt
teaspoon cayenne pepper
3 Tablespoons melted butter
Marinade --
Whisk buttermilk, eggs, lemon juice, garlic, salt and cayenne pepper together. Add chicken tenderloins to the marinade, cover and refrigerate for several hours. This helps to tenderize the chicken and infuse the flavor of the other ingredients in the marinade.
After several hours, dredge in the following mixture.
Breading --
Mix the Italian bread crumbs, chopped pecans, black pepper, salt, and cayenne pepper together in a shallow bowl. Dredge the chicken tenderloins in the mixture and place on an aluminum foil lined baking pan that has been sp

3 cups Corn cereal
1/2 cup grated Parmesan cheese
1/2 tsp salt
1/2 tsp seasoned salt
1/4 tsp paprika
1/8 tsp garlic powder
3 tbsp margarine or butter, melted
1 tbsp milk
1 lb boneless, skinless chicken breasts, cut into 1x1-inch pieces
Procedures : Heat oven to 400?. Line cookie sheet with aluminum foil. Crush cereal.
Mix cereal, cheese, salt, seasoned salt, paprika and garlic powder in medium bowl; set aside.
Stir together margarine and milk. Dip chicken into margarine mixture; roll in cereal mixture to coat evenly. Arrange on cookie sheet. Bake 9 minutes; turn nuggets over.
Bake about 8 minutes longer or until coating is light golden brown and chicken is no longer pink in center.
Serve with sweet and sour or barbecue sauce, if desired
