Chocolate Coconut Coffee Cake

This light texture Coffee Cake goes great with a cup of coffee or tea.
1 cup butter (2 ) Sticks room temperature
2 cups granulated sugar
2 eggs room temperature
1 cup sour cream
1 teaspoon lemon juice
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon lemon juice
1/2 cup coconut
1/4 cup baking cocoa
1/4 teaspoon cinnamon
2 Tablespoons melted cooled butter
1/4 cup granulated sugar
In a large bowl cream butter, sugar and eggs until smooth.
Add sour cream, lemon juice, beat well. Add flour, baking powder and salt till all combined and smooth.
For filling and topping: In a small bowl put coconut, cinnamon,cocoa, 1/4 cup granulated sugar and mix well.
Pour half the batter into cake pan sprinkle half of the filling over batter. Pour the rest of cake batter into cake pan sprinkle rest of topping over the batter and bake.
Bake at 350 for 1 hr to 5-10 minutes use toothpick or cake tester
Use a 10-12 cup fluted pan or a 10 cup tube pan Grease well and dust with flour.
Once baked cool cake on a cooling rack for 10-15 minutes before removing cake.
Optional: Glaze 1 cup powder sugar 1-2 Tablespoons milk or water till smooth.Drizzle over cooled cake. ( You can also put 1 cup of chopped nuts your choice into filling mixture)

1/3 cup mini chocolate chips
1/2 cup firmly packed brown sugar, divided
1 tablespoon butter or margarine, melted
2 cups buttermilk baking mix
1 egg
2/3 cup milk
2 tablespoons vegetable oil
Procedures : In greased 9 x 2-inch microwave safe dish (preferably glass), combine coconut, pecans, chocolate pieces, 1/4 cup brown sugar and butter. Mix well.
In bowl, combine baking mix, remaining 1/4 cup brown sugar, egg, milk and oil, mixing until smooth. Pour over coconut mixture in dish. Microwave on HIGH for 4 to 5 minutes, turning dish 1/4 turn after 2 minutes. Cool on counter 5 minutes.
Invert onto serving plate. If cake does not release from baking dish, return to oven on serving plate, covered by baking dish and microwave 1 minute
