Creamy Chicken and Penne

CREAMY CHICKEN PASTA CARBONARA RECIPE

Welcome to the SimpleCookingChannel. Things might get pretty simple sometimes but sometimes that's just what a person needs. I hope you like my recipe for creamy chicken pasta carbonara.

Ingredients

250 grams ( 8.8 ounces ) of chicken breast
75 grams ( 2.6 ounces ) of bacon
100 grams ( 3.5 ounces ) of mushrooms

For the sauce

2 Eggs
75 Grams ( 2.6 ounces ) of melted butter or margarine
100-150 grams ( 3.5-5.3 ounces ) of parmesan cheese
300 grams ( 10.6 ounces ) of thickened cream
12 grinds of pepper
1.5 Tablespoons of garlic

Pasta

2 Cups of Penne pasta

Garnish with shallots, chives or parsley

Also, mixing the parmesan with the eggs before pouring it onto the pasta would raise more than one eyebrow here in Italy. The recipe is as simple: cook the pasta, then add the fried "pancetta" (not bacon, but if you can't find pancetta, then bacon is ). Then add the eggs, salt and pepper mix. Then add the parmesan. That's it.

I am Italian, I cook since I was 10 years old and I have probably 150/200 cookbooks, most of them published in Italy. So, I know something about a carbonara. And this is NOT a carbonara. Plain and simple.

if you give every dish a name, you would get confused, because every dish has its own variations.

also comparing a pear to an apple isn't right, a pear isn't a variation to the apple.

And, by the way, apples and pears are not as distantly related as you seem to think. Same family (Rosaceae) and even same subfamily (Amygdaloideae). The recipe on this page and the true carbonara are a lot more distantly related. Fact. :)

Thats carbonara, then you can add chicken or bacon.

You'll Need:

Makes 6 servings

1 pound penne pasta
4 cups broccoli florets
1 onion, sliced
1 tablespoon olive oil
1/2 pound boneless, skinless chicken breasts,
cut in 3 x 1-inch strips
3/4 cup sun dried tomatoes in oil, drained and
finely chopped
1 cup heavy cream
1/2 cup chicken broth
2 tablespoons balsamic vinegar
1 teaspoon salt
1/4 teaspoon black pepper
3/4 cup Parmesan cheese

Procedures : Cook pasta according to package directions. Stir in broccoli during last 2 minutes of cooking.

Saut� onion in olive oil until softened.

Add chicken and saut�.

Stir in sun dried tomatoes, cream, broth, vinegar, salt and pepper. Simmer about 4 minutes.

Drain pasta and broccoli, toss with chicken mixture and parmesan cheese
