Festive Omelette with Brandy and Mincemeat

Fruit Mince Pies - CHRISTMAS RECIPE

Fruit Mince Pies are a traditional festive treat and an essential for any Christmas celebration. Dried Fruit is combined with brandy, brown sugar, citrus zest and grated apple. The fruit mince is enveloped in home made sweet shortcrust pastry and baked until golden. These gorgeous pies will be a big hit - give it a go!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

PASTRY:

2 Cups of Plain Flour
3/4 Cup of Icing Sugar (Powdered Sugar / Confectioners Sugar)
150g of Butter (chopped)
2 - 3 Tablespoons of Iced Water

FRUIT MINCE:

1 Cup of Mixed Dried Fruit
1 Green Apple (grated)
1/3 Cup of Brown Sugar
1 Teaspoon of Grated Lemon Zest
1 Teaspoon of Grated Orange Zest
1/2 Teaspoon of Nutmeg
1/2 Teaspoon of Mixed Spice
1 Tablespoon of Lemon Juice
1 Tablespoon of Brandy
25g of Butter (melted)


Preparation Time: About 20 minutes
Cooking Time: About 30 minutes

MAKES 12 PIES


ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

You'll Need:

# 3 eggs, large
# 1 tbsp. milk
# one and a half ounces (40g) butter
# pinch of salt
# pinch of caster sugar
# 1 tsp. rum
# 3-4 ozs. mincemeat
# 2 tbsps brandy

Procedures : # Break the eggs into a mixing bowl then add the salt and rum
# Beat lightly with a fork until the eggs and yolks are mixed and just a little froth beginning to appear
# Stir in the milk
# Put the butter in a 6-7 inch (15-17cms) heavy based frying or omelette pan and heat until it begins to 'haze'
# Pour the egg mixture into the center of the pan and keep shaking the pan while stirring the eggs with a fork as in making a scrambled egg mixture
# When the center of the omelette looks scrambled, leave the pan stationary for five to six seconds for the bottom to brown slightly
# Carefully fold the omelette in two and slip off the pan onto a plate
# Stuff the pancake with warmed mincemeat, pour over the brandy and set alight as it comes to the tabl
