Elegant Chicken in Foil Packets

Yields: 6 servings
Ingredients:
1 (10¾ oz.) can cream of mushroom soup
1 ¾ cups water, divided
1 (6oz.) pkg. stuffing mix for chicken
6 boneless chicken breasts
4 slices deli ham, sliced thin
1 (8oz.) pkg. sliced mushrooms
1 ½ cups frozen peas
Preparation Directions:
~ Preheat oven to 400 degrees. Mix soup and ¼ cup of water; set aside. Combine stuffing mix and remaining 1 ½ cups water; spoon evenly onto center of 6 large sheets of heavy duty foil. Top each with 1 chicken breast. Cover evenly with ham, mushrooms, peas, and soup mixture.
~ Fold foil into packets leaving room for heat circulation. Place packets in a single layer on a baking pan.
~ Bake 30 to 35 minutes or until chicken is cooked through. Remove from oven and let stand for 5 minutes.
~Place one packet on each of 6 plates, cut and fold back foil for an elegant presentation

You'll Need:
24 fresh crimini mushrooms, stems removed
4 green onions, chopped
2 tablespoons pine nuts
1/4 cup olive oil
salt and freshly ground black pepper to taste
Procedures : Preheat the grill for high heat. Lightly grease 4 large sheets of heavy duty aluminum foil.
Stuff each mushroom with equal amounts of green onions and pine nuts. Place 6 mushrooms on each piece of aluminum foil. Drizzle with olive oil, and season with salt and pepper. Seal the foil around the mushrooms, forming 4 packets.
Place the foil packets on the preheated grill, and cook 20 minutes, until mushrooms are tender
