Strawberry Jello (Jelly) Cheesecake Squares

1 1/4 cups of graham wafer crumbs (or digestive biscuit crumbs)
1/4 cup white sugar
1/4 cup melted butter or margarine
Mix the ingredients together and press into the bottom of a 9x13" pan that has been lined with plastic wrap. If you don't intend on lifting the dessert out of the pan and want to serve it right from the pan, omit the plastic wrap.
Mix 1 cup of boiling water with 1 envelope (28g or 2 1/2 tsp) of unflavoured gelatin and stir until dissolved. Add in two 8 oz (250g) packages of creme cheese and 2/3 cup of white sugar and blend until smooth. Pour this mixture over the top of the crumbs.
Clean and dry strawberries. I used 8. Cut them in half and using a heart shaped cookie cutter or a clean pair of scissors or a knife, make them into a heart shape.
Press the strawberries firmly into the cheesecake layer.
Chill for at least 11/2 to 2 hours.
Mix a 3oz (85g) package of straberry jello powder (jelly powder) with 1 cup of boiling water, stir until dissolved and then add one cup of cold water. Gently pour the jello mixture over the chilled cheesecake layer. If any strawberries detach and float, try to push them back into the cream cheese layer, they may not want to stay there however, lol.
Keep refrigerated.
You can modify the amount of sugar used in this to your taste. If you use digestive biscuits omit the sugar completely.

Takkazxo пишет: if you use sweetened condensed milk instead of cream cheese it gives it a wonderful sweet flavour, and lasts longer as well, also you can do this for childrens parties but use green jelly/jello as well (different container) and put red and green race car lollies or gummy bears instead of strawberries, a great little treat for birthday parties, they also work well for adult get togethers :) absolutely amazing, in australia we use milk arrowroot biscuits for the base :)

You'll Need:
1 cup all-purpose flour
1/2 cup chopped walnuts
1/4 cup packed brown sugar
1/2 cup melted butter
2 1/2 cups strawberries, finely chopped
1/2 cup white sugar
1 tablespoon lemon juice
1 (16 ounce) container frozen whipped topping, thawed
Procedures : Preheat oven to 350 degrees F (175 degrees C).
To make the crust: combine flour, nuts, and brown sugar. Add melted butter, tossing to combine the ingredients. Spread the mixture in a 9x13 inch pan.
Bake the crust at 350 degrees F (175 degrees C) for 15 minutes, stirring occasionally until lightly browned. Remove from pan and set aside to cool. Sprinkle 1 1/2 cups crust mixture in a 9x13 inch pan. Reserve the remaining crust mixture.
Filling: In large bowl combine strawberries, sugar and lemon juice. Fold whipped topping into the mixture. Carefully spoon filling over the crust mixture. Sprinkle the remaining crust mixture on top. Cover and freeze for 6 hours or until firm. (You will need the full 6 hours)
