Pasta With Tomato, Basil And Ricotta

Pasta with dry tomatoes and ricotta cheese - Orecchiette maritate con pomodori secchi e ricotta

Ingredients for about 6 persons:
500g pasta (I used a typical italian pasta "orecchiette maritate")
400g ricotta cheese
1 shallot and 1 onion
5/6 spoons of extra virgin oliva oil
20 dry tomatoes
salt, basil (and black pepper if you like)
parmisan on the plate
Cut the tomatoes in little pieces;
Cook the pasta "al dente" in salted water and preserve a cup of the water.
In a large pan, low flame, put the oil, the the minced onions and after 5 minutes add the tomatoes. After 3 minutes add the ricotta and then the pasta (al dente), the basil and black pepper if you like. Parmisan on the plate.
You'll Need:

1 1/2 cups tomatoes, chopped
1/4 cup fresh basil, chopped
1 tablespoon red onion, minced
1 clove garlic, chopped
1/2 cup part-skim ricotta cheese
1 tablespoon olive oil
salt and freshly ground black pepper
1/2 pound pasta, rotelle, Ziti Or Penne, cooked al dente

Procedures : Combine the tomatoes, basil, onion, garlic. Stir in the ricotta, olive oil, salt and pepper to taste. Toss hot pasta with the sauce and serve at once.
