I just did a few things different, I used canned pineapple instead, and in pineapple syrup added 1/2 cup of water and let it simmer until it was syrupy... and to the batter I added a teaspoon of baking power and pinch of salt. I also don't own a whisk machine or anything similar, so I whipped everything with a fork :). So proud of how this turned out!

Question: Could you soak the pineapple in a cherry liquer or some other alcoholic beverage before using it and would that add a bit of character to this recipe or would it be too much?

When I was a kid in Chicago, my parents would go out to eat not that often, at some place, and they would bring back the most delicious PUSD cake you could imagine. This is just like that! If you had one made like this as a kid, then this would be your favorite cake. A proper moist Tierra Masue takes a second place, and everything else does not compare. Made two of these tonight. Looking forward to a slice after cooled.

You'll Need:
2 ? c cakeflour
1 c sugar
? c pineapple juice
1 t vanilla
8 pcs. eggs
1 can pineapple slice
1 t baking powder
? c oil
? c raisins
? c brown sugar
Procedures : Assemble all needed tools and ings. Sift and measure all dry ings. Combine together. Make a well at the center. Place the liquid ings. at the center of the well and blend thoroughly. Beat egg whites until fluffy and fold in the batter mixture. Grease baking pan with butter and sprinkle brown sugar. Put the pineapple slice on the pan and sprinkle with raisins. Then pour the mixture. Bake at 350o F until done.
