Shells with Mango Shrimp

Mango Shrimp Saute | Cuban With A Twist | Episode 92








Описание:

Mango and Shrimp Saute

Ingredients:

2 lbs. of cleaned and deveined shrimp (remove tail end shells)
½ of a mango (chopped)
1 fresh guava (sliced in ½ seeds and skin removed)
1 lemon
1 shallot
1 tomatillo
½ cup of San Marzano tomatoes
2 cloves of garlic
3 fresh sage leaves
½ of a habanero
1 tablespoon of butter
Olive oil
Sea Salt
Black pepper
Sweet paprika
Sweet Curry

Simple Salad Ingredients:

3 cups of a mixture of baby kale, baby spinach, and romaine
½ cup of mini cucumbers (sliced)
3 fresh basil leaves (chopped)
½ cup of green onions (chopped)
Olive oil
Sea Salt
Black pepper

Yuca Chips Ingredients:

1 Yuca
Peanut oil alt. vegetable oil

Directions

1. Season shrimp with juice from one lemon, olive oil, sea salt, and black pepper. Cover and refrigerate for 20 minutes.
2. Roast tomatoes with olive oil, sea salt , and black pepper for 20 minutes at 400 degrees.
3. Place a sauté pan on medium heat add 1 tablespoon of butter. Allow to somewhat melt.
4. Add 1 tablespoon of olive oil, chopped garlic and chopped shallot. Stir ingredients together. Place pan on low heat.
5. Remove roasted tomatoes from oven and add to sauté pan, stir and place on simmer.
6. Add chopped tomatillo and ½ of a habanero, stir, simmer for 15 minutes.
7. Add a pinch of sweet paprika and a pinch of sweet curry to ingredients, stir.
8. Add shrimp to sauté pan, stir, allow to cook until shrimp are completely pink.
9. Top with fresh yuca chips and serve over a simple salad or white rice.

Fresh Yuca Chips

1. Cut the tips of the yuca (make sure that both ends are white)
2. Remove skin from yuca.
3. Using a vegetable peeler, peel off thin slivers of yuca.
4. Place a frying pan on medium heat, cover one inch of the pan with peanut or vegetable oil.
5. Once oil is heated carefully add raw yuca chips, cook until light golden brown.
6. Remove from oil and pat with a paper towel to remove excess oil.

You'll Need:

1 red bell pepper sliced
1 Shallot minced
2 tsp sesame oil
1/2 cup fresh cilantro leaves minced
1 lb Shrimp cleaned and deveined
3 tbsp fresh lime juice
2 tsp Bon Appetit
16 oz black beans rinsed
1 cup mango cut into 1" cubes
8 oz pasta small shells

Procedures : In a medium bowl, toss shrimp with lime juice. Sprinkle generously with Bon Appetit. Set aside.
Bring a large pot of water to a boil. Add pasta, and cook until just al dente, 8-10 minutes. Drain.
In a large non-stick skillet over medium heat, saute red bell pepper and shallot in sesame oil until pepper is almost soft - do not allow to brown.
Add cilantro, and shrimp. Continue to cook until shrimp is pink, stirring occasionally, about 4 minutes. Add black beans, cooked pasta and mango; stir together. Remove from heat when beans are heated through. Serve
