
How To Cook Shrimp with Alfredo Sauce and Pasta

Move over Rachael Ray! Tiedyeman is cookin' now! From preparing the ingredients to finished dish, Tiedyeman shows how to cook shrimp with Alfredo sauce and pasta. Using mostly fresh ingredients to create a subtle blend of flavors that will be delicious and relatively easy to fix. This meal takes about 15 minutes to cook after the prep work is done. Please, try this at home! Here's an approximate list of ingredients for people that like to measure stuff while they cook:
1 lb. shrimp
2 tbsp butter
3 to 6 pieces of fresh garlic
1 pint half and half
2 oz. Parmesan cheese
1 tbsp flour
1/2 cup water
1/8 tsp basil
1/8 tsp oregano
1 lb package of pasta
1/2 tsp salt

Parmesan cheese has a very strong flavor though, if you want to add more cheese I'd recommend adding another kind like mozzarella or jack. I added too much Parmesan once and it ruined the subtle blending of flavors.

I make my own alfredo, which is pretty good, but this LOOKS GREAT!! =)\r
Making it tonight, and don't want to ruin it by adding heavy cream if it doesn't taste as good with your recipe.

We had this for dinner tonight. I was out of Parmesan so I had to use mozzarella and I threw in a little cheddar, I used spaghetti noodles instead of angel hair and it was still good.

Also you won't need to thicken it with the flour/water mix like I did in the video. Sure you can add more Parmesan, taste the sauce and if you think it needs more, then add more. Adding fresh basil when serving would be good too. I have even made this with soy milk and it still tasted great.

The enchiladas are a bit more work than this recipe, (takes much longer to make them than the actual length of the video) but well worth it. Best thing to do is have some barbequed steak the night before you fix the enchiladas. Cook an extra steak and use it for the meat. Happy cooking!

Look at the ingredients on any commercial gravy or sauce in a jar and usually you'll find wheat flour, corn starch, modified food starch, guar gum, or similar thickeners. Sometimes multiple thickeners are added. I've seen Alfredo sauce with 4 thickeners and no cream or milk. Nasty! That's why I make my own sauces, real food, no junk!

You'll Need:
1 cup sliced mushrooms
1 tbsp olive oil
3/4 lb medium shrimp, shelled
1 1/2 cup champagne
1/2 tsp corning garlic pepper seasoning
2 tbsp minced shallots or scallions
1 large tomato, diced
1 cup heavy cream
1/2 lb dried thin spaghetti
3 tbsp chopped parsley
1 grated Parmesan cheese
Procedures : Saute mushrooms in medium saucepan in hot olive oil over medium-high heat. Cook just long enough to release mushroom juices and let them evaporate. Remove mushrooms and set aside.
In same saucepan, combine shrimp, Champagne and garlic pepper seasoning. Over high heat, heat to simmer.
When liquid just boils, shrimp are done. Remove shrimp from cooking liquid with a slotted spoon immediately. Set shrimp aside. Add chopped shallots and tomatoes to cooking liquid. Boil over high heat until liquid is reduced to about 1/2 cup, approximately 8 minutes.
When liquid is reduced, add 3/4 cup heavy cream and boil 1 to 2 minutes, til slightly thickened and reduced. Add shrimp and mushrooms to sauce; heat through. Taste and add more seasoning if needed.
Meanwhile cook pasta according to directions on package. Drain thoroughly and return to cooking pot. Toss with remaining 1/4 cup cream and parsley. To serve, divide pasta between two plates.
Spoon shrimp and sauce over pasta. Garnish with Parmesan to taste
