Southwest Shrimp Cocktail

Executive Chef Christopher McLean, of Bishop's Lodge Ranch Resort Hotel and Spa in Santa Fe, makes his delicious Southwest Shrimp Cocktail and General Manager Rich Verruni talks about the rich history, amenities and upcoming Holiday excitement at Bishop's Lodge.
You'll Need:

1 pound large shrimp, peeled and de-veined
1 1/2 cups salsa, chilled
1 avocado, peeled and sliced
Lettuce, chopped
Cilantro
Lemon wedges

Procedures : Place the shrimp in boiling water. Cook just until the water returns to a boil. Chill fully.

Place the lettuce in a small shallow bowl. Spoon 1/4 of the salsa in the middle. Stick avocado slices in the salsa. Place the shrimp around the salsa. Garnish with lemon wedges and cilantro sprigs.
